I actually hesitate to call it an insalata, because there is really nothing to it. Ingredients:vine-ripened tomatoes 1 lb fresh mozzarella cheese basil leaves olive oil balsamic vinegar pepper to taste Directions: Slice the tomatoes. Slice the mozzarella log into about 1/4 inch slices. Break up or shred basil leaves. (I used a basil grinder) Arrange on plate, with a slice of tomato, then a basil leaf, going all the way around the plate. When you've completed the circle, fill in the middle. Grind some fresh black pepper to taste, then drizzle with some olive oil. Put olive oil and balsamic vinegar out, so guests can mix and eat.

"Insalata" - means "in salad". Salad by nature is a mix of vegetables/fruits- you got that ""caprese"- "Capra"- goat/goat cheese- you got cheese! Since you you have a mixture of vegetables and cheese= caprese insalata= salad with (goat) cheese! Just because it has an Italian name, don't expect it to look fancy! But I'm positive that is delicious!

Yeah, we are some if the only people who seem to think a salad needs to start with a head of lettuce.

I am an odd ball since I don't particularly like lettuce. Just throw all the "salad makings" in a bowl/plate and I am a happy camper. I don't object if a little fresh baby spinach gets thrown into the mix but that's about it. I treat salads like a stir fry. All fresh (compatible) raw veggies can go into it along with nuts, etc. ETA: during the summer when I have way to many tomatoes, cukes I can eat "fire and ice" salad every day and never get tired of it.

Yeah, summer salad in our house is often tomatoes cakes and onions. Or cabbage salad. I agree on lettuce. It's ok. Better as a 'bun' for my burger though
