Just be aware that parking in Seattle is really expensive at hotels, so if you decide that you are going to hit the attractions where you need a car, it's probably smarter to rent a car for those specific days rather than just keep a car while you are running around Seattle.
Last year, I met a friend in Seattle and we played tourist (I had already seen many of the attractions, just went again). I think we had a $50 parking bill at the hotel on top of the room. We stayed in a hotel that was a distance from my friend's hotel (no rooms available at the place she was staying when I went looking) and it was easier for us to just take a cab from our hotel to her's, rather than look (and pay) for a second round of parking).
Restaurant wise, I recommend Ray's Boathouse highly. I've been several times and never had a bad meal there with awesome seafood. Ray's Cafe (upper level) is more casual and cheaper. If you want a really special meal (probably minus your kids), you and your DH might want to try The Herb Farm. You'll need a car for that though.
Check to see what events are going on at McCaw Hall if you like ballet or opera. We have season tickets here (going this weekend) and both are excellent.

I live in Oregon and ditto the CNP needs to be a seperate trip. Plus you could add in the Ashland Shakespeare festival- which is a hoot. For Seattle though- I haven't read all the thread so I'm not sure if it's been mentioned but the Locks are interesting. DS could have stood there for hours and watched. Leavenworth is a few hours outside of seattle and that is too cute of a place. A trip over to Victoria, or the San Juans would be awesome too. How did I not realize that?! Not sure- It's come up before. Maybe you just weren't paying attention...

When I lived in Seattle Ray's Boathouse was a favorite. Haven't been tnere in years but glad it's still doing well. It's touristy, but fun - Ivar's Salmon House on Lake Union.
