My wife got a steal on a big box of meat, and among it were three packs of pork steaks. I have a few ideas, but was hoping some of you had some tried and true recipes for this cut of meat.

First, I never heard of "pork steaks". Beef steak or pork chops yeah but not pork steak.
And then why oh why do you people torture food? Maple sirop and apples with pork? Throw some crepes in the mix too then! Apricot jam or marmalade? Now THAT just destroyed pork for me!
Now, if you want really good pork(and I pegged you right!), start a fire in the back yard and get some hot coals going. You need to marinate the pork a bit before hand in whatever spices and salt: Ie garlic, black pepper, throw in some bay leafs, a drop of vinegar etc. When you have a good bed of coals throw the pork straight on, no griddle nothing. On a spit! Cook it however you like it and enjoy!

If they're the thick ones, I like to marinate them and then grill them. McCormick's makes and AWESOME chipotle marinade.
If they're the thin ones, melt some bacon fat in a skillet. Salt and pepper the steaks, then do a quick sear on each side. Remove them from the skillet and make some brown gravy. Add lots of fresh mushrooms. Take the gravy off the burner, add the steaks back, and then top it all with shredded mozzarella. Cover the skillet until the cheese is melted. Serve over brown rice or farro.
