It's almost Turkey Day and I'm thinking of stuffing. I've never cared for stuffing from a box. But I've had some awesome stuffings at potlucks. I have no idea how to make stuffing, so post your recipe please!

My general recipe is seldom the same as it depends on what ingredients i have on hand, i have only 2 mandatory ingredients =Bread and sage, Once the bread is cubed and 2 tbspoons of sage thrown in we start adding stuff, i usually cook some onions and or leeks in a cup of butter, once soft into the bread mixture it goes., other things you can add are= celery carrots apples raisins cranberries Walnuts or slivered almonds pepper Sometimes ill put in some bacon and or the turkey liver. Add a splash of chicken stock to get the right moisture content then Mix it all up put in a greased casserole dish and bake at 350 for an hour

Sausage, Apple, and Fennel Corn Bread Stuffing/Dressing Ingredients:
1 day-old cast iron skillet cornbread 2 tsp light olive oil 6 ounces bulk Italian sausage 2 cups onion, finely chopped 1 bay leaf 1 large Granny Smith apple, diced ½ cup diced celery ½ cup diced fennel bulb 1 tsp garlic, minced ½ tsp poultry seasoning ½ tsp salt ¼ tsp fresh ground black pepper ¼ tsp crushed red pepper 1½ cups turkey stock 2 large eggs, lightly beaten Instructions:
Preheat the oven to 375°F. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausage and saute it until browned, stirring occasionally. Add the onion and bay leaf and cook until the onion starts to brown, stirring occasionally. Add the apple, celery, and fennel and continue to saute for 5 minutes. Add the garlic and the next 5 ingredients (through black pepper) and saute 1 minute more. Remove the sausage mixture from the heat and discard the bay leaf. Cool the sausage mixture to room temperature. Crumble the corn bread into a large bowl. Add the cooled sausage mixture to the bowl and toss to combine. Add the broth and 2 eggs to the bowl and toss to combine. Stuff the mixture up your turkey's butt, or alternatively, spoon the mixture into a 9- x 13-inch baking dish coated with cooking spray. Cook the turkey in the usual manner, placing the baking dish in the oven with the turkey for the last hour of cooking.
