I've been told by various sources that sweet potatoes are a very healthy super food however the only recipe i can think of is mashed sweet potatoes, any one got some recipes that are a bit more creative? Thanks

Not very healthy. Lots of sugar but very yummy! Sweet Potato casserole 3 cups mashed sweet potato 1/3 cup milk 1/2 cup butter 1 cup sugar 1 t vanilla- I use a little more pinch of salt mix well put in baking dish, mix topping and crumble on top Topping: 1 cup light brown sugar 1/3 cup butter 1/3 cup flour 1 cup chopped pecans- I use a little more Bake 350 for 30 mins or until bubbling.

Thanks Do you ever bake a chicken, make a pot roast or roast beef in the oven? I like to toss in chunked sweet potatoes. Delicious, and couldn't be simpler. I eat a lot of sweet potatoes, not because they're a super food, but because I really like them. Don't want to get too healthy, you know.

I love them but eat them microwaved. Just poke the skin then microwave until soft. I like to dip bites in butter and love salt but can't really eat salt so just a tiny bit of butter. For company dinners you can mash use brown sugar, marshmallows and butter but then not so healthy.

For company dinners you can mash use brown sugar, marshmallows and butter but then not so healthy.I should not admit how much I love them this way (for years, it was the only way I would eat them). We usually just slice them after boiling them to soften though, don't mash them. Most of the things I do to sweet potatoes make them no longer healthy (above plus pies). You can cube them and roast them like you would other vegetables, but that's not all that creative either. I'm sure they'd work in some soups as well.

sweet potato tacos is one of my favorite ways to eat sweet potatoes. Just make tacos like you normally would but instead of filling a taco shell, you fill a split open roasted sweet potato. Doesn't sound like a good taste combo, but man, they are good.

I like sweet potatoes just about any way they come to me. Sometimes, I'll just pitch one into the oven, bake it until soft, add some butter and scarf that sucker down. Really good!

Sweet Potato Souffle
3 pounds sweet potatoes !/4 cup butter 1/4 cup firmly packed brown sugar 1 teaspoon almond extract 3 large eggs 1/2 teaspoon salt 1/2 teaspoon cinnamon Handful of slivered almonds
Preheat oven 350.
Grease shallow baking dish, cut potatoes in 1/2. Bake until soft.
Scoop insides into mixing bowl, beat until smooth. Beat in butter until melted, then beat in remaining ingredients.
Spread in buttered baking dish, sprinkle almonds over top.
Bake uncovered 30-35 minutes until firm and golden.
Makes 8 servings.
You can use 3 tablespoons of light rum instead of the almond extract and almond if you prefer. Personally, I like it better with almonds.

2 large sweet potatoes cut into bite size pieces 1 apple cored and diced into small pieces 2 Tbsp dried cranberries 1.5 Tbsp butter 1 rounded Tbsp brown sugar 3/4 tsp salt 1/2 tsp cinnamon
Combine all ingredients in a gallon zip lock bag and shake until combined. Empty bag into a microwave safe bowl and nuke for 8-9 minutes until sweet potatoes are tender.

I've been making these the last two days: Extra Crispy Sweet PotatoesThey aren't really crispy (at least, mine haven't gotten that way, I've been using the red garnet sweet potatoes), but they're good. I reduced the salt and today I didn't use the sugar and they were still really good. I did not peel them either. The link uses chipotle mayo for dipping, I just mixed a little mayo, homemade bbq sauce, and a bit of hot sauce to dip mine in. Very good.
