Two buffet options that price out about the same:
1) Breakfast plus carving station: Assorted muffins, bacon, biscuits and gravy, breakfast potatoes, waffle, and omelette stations, +prime rib carving station
2) Lunch plus breakfast stations: Platters of thin sliced roast beef, turkey, ham, salami, sliced cheddar, Swiss & Jack cheeses, lettuce, tomatoes, onions, pickles and assorted breads Served with potato salad, pasta salad and tossed green salad, +waffle and omelette stations
I think option 2 offers more variety, but my fiance prefers the breakfast items and carving station. He's okay with whatever I decide, I just want it to be as people friendly as possible.
We could add fruit, cheese, vegetable, or antipasto display to either for $100 each.
Brunch reception is from 11-1.

What is happening this day or the evening/night before? Is this before or after a wedding? Where will this meal be eaten physically in relationship to where people will be staying and any other event that day?

People are either staying within 15 minutes of the location, or driving ~2 hours morning of. Pics at 9, wedding is at 10, reception at 11, same location. We'll probably meet up with guests who stick around for dinner at 6-ish. Night before we are catering Italian dinner at a friend's cabin.

Lunch is my choice people will have breakfast before they get ready to go . The meat isn't a breakfast food so would mean they would want mashed potatoes with it and salad not waffles or muffins. The lunch food is less messy than the biscuits and gravy and prime rib so easier on the fancy clothing many will be wearing.

Brunch menu #1 all the way.
Whoever said meat doesn't go with breakfast food doesn't brunch out much! LOL
I am a brunch-o-holic all the way. #1 is perfect.

See, based on the time 11-1, I wouldn't call this a brunch reception. I would call it a lunch reception, so I would go with option 2. People will have eaten breakfast before they come to the wedding.
CAVEAT: I don't like most breakfast foods, so I am not really even a fan of fancy breakfast for breakfast, let alone for lunch or dinner. If you or your DH is a big breakfast fan, then go for that. But it's not what I would do.

It looks like Breakfast plus Prime Rib or Breakfast plus Cold Cuts.
I'm with ArchietheDragon and would choose #1. And I would add the fruit.
But congratulations and have fun whatever you choose .

First, my bias is towards Option 1 - breakfast foods are good anytime of day!
That said, the lunch sandwiches -option 2 - seem more casual to me than the traditional 'brunch' Option 1. But that may just be because I go to a lot of family/friends informal get togethers/outings where we have 'a giant sub' or a 'sandwich platter' and a cooler of beer/wine.
Option 1 to me says "I'm gonna sit a table and use a cloth napkin with silverware".
Being a Weight Watcher (and who sometimes opts for vegetarian faire (but I'm really a flexitarian)) - a platter of fruit offered with Option 1 would be most appreciated (and delicious).
I also like the Bloody Mary and Mimosa Bar idea.

Hmm, option 1 makes a resurgence. We are planning mimosas, I'll see about adding bloody marys to that.
For those who like option 2, would adding the antipasto to option 1 make it more lunch friendly?

I would do #1 with fruit. Love the mimosa and bloody mary bar idea.
And congrats on your upcoming nuptials.

I would also do lunch/option #2. Likely no one is going to start eating until 11:30, anyway. Technically, it's only brunch for the folks that live 15 minutes away. Everyone else is going to be up and out the door like it's a normal work day. When we have brunch, we do not eat breakfast. If I have a long day ahead of me, I'm going to eat breakfast and lunch. Maybe you should just call it "Elevensies." ETA: Yes congrats! What ever you choose, your day will be great.

We'll probably meet up with guests who stick around for dinner at 6-ish. Night before we are catering Italian dinner at a friend's cabin. I guess the next question would be what the guest list looks like. How many older folks? Children? I can see a young adult crowd doing fine with waiting until 11 for breakfast. I think most older folks will have a more difficult time with it. Kids will generally have to have breakfast before and option 1 doesn't seem very kid friendly. I don't think that the option 1 looks like a great reception menu. It looks like a sit down meal to me. Option 2 looks like it could be much more munchies while socializing friendly. So maybe consider what you want the time to look like.

If you want casual do the lunch. If you want more formal go with breakfast. For either of them add the fruit.

Hah! we will add nothing but confusion to your decision! I'm a vote for eggs & prime carving station + fruit. I don't like cold cuts at all. But then again, I've been to many weddings where we plan the exit around leaving to go eat!!! I'd stay for the mimosa's What is the make-up of your guest list in age & foodie preference? Do you have a dietary restriction group - Vegan, Gluten free, Dairy free, cholesterol free? Both menus present challenges for the vegan. The breakfast menu is a little easier for cholesterol (they will make omlet with whites if you ask) and gluten or dairy free. Congrats & I hope you have a really fun day!!!

I'm not a brunch person, but I see the attraction of the prime rib in option #1. I'd add fruit if you go with breakfast and veggies or the antipasto if you go with lunch.
Mimosas do sound like a great idea.
ETA: I see option 2 more friendly as a dairy avoider as I also don't like eggs. Option one I could eat the meat and possibly the potatoes if they aren't too butter laden. Option two I skip the cheese and salad if it has cheese/croutons. Rockit made a great point about vegans.

We had a 95th birthday party for my Mom last October. We combined the two, some wonderful breakfast items along with lunch menu. That way late risers were able to have the breakfast items and those like me who get up at 6 Am had lunch.
I think we did have some champagne, but most of us were over the age of 70, so no one really cared for drinks other than soft drinks. We had it at the country club our son belongs to and IIRC, the cost was about $30 pp + tax and tips

Vote is currently option 1, 9-4 I'll definitely add fruit as that seems pretty popular. We have about 15 kids in attendance, 3 people over 70. I think kids should be ok with waffles, bacon, fruit, and cake. The over 70 will probably complain no matter what If I go with the more breakfast option I'll be sure to tell the overnight crowd so they know not to go as heavy on breakfast. The people driving won't really have time for a big breakfast, or at least will have some time in between.

We did the #1 option at our wedding, as a matter of fact. Offered the mimosas, Bloody Marys and an open bar, plus fresh fruit and desserts. People loved it, and still talk about the food at my wedding as the some of the best ever.

Option 1 plus fruit and antipasto has been requested. My fiance had a little panic attack last night when he realized I hadn't communicated the final menu to the venue yet and worried they would cancel the wedding
