Beef Stew is always one of my "comfort" foods in the cooler season - you can cook it in a large pot or crockpot/slow-cooker if you have one.
Serve with nice crusty bread to dip/soak up all the gravy/juices. It's an inexpensive but hearty meal.Click Here for Recipe

I take beef that is sliced into thin pieces. I sear it with a little olive oil. Then I turn the pan down to low and add balsamic vinegar and let it simmer for 10 minutes or so. The vinegar gets a little thicker and flavors the meat.
After that, I do one of two things with the meat - either I make a salad with all the awesome fixings - including cheese and nuts, etc. I make a vinegerette with balsamic vinegar, dijon mustard and olive oil, and put the meat on top. The second thing I do is take soft sandwich rolls, split them open and put cheese on them - blue cheese, goat cheese, cream cheese are the three I use. I put that under the broiler so the cheese gets melty and the rolls get toasty. Put the meat on the sandwich and yum!
