Make a cream soup? Or curry/butter chicken? I use almond milk to cream cashews for cream dishes.

I've frozen almond milk before and it hasn't turned out well. It separates and doesn't pull back together properly, even if I give it a whirl in the blender.

I'd say anything you don't mind the nutty flavor in, it always stands out to me even mixed into something. I have nothing specific that's low carb though. I finished the one I had off with cereal.

Used all but about 2 TBS of the carton this weekend: DH put some on his cereal, which is almond flavored. I made several homemade java mochas. Sunday I made almond flour blueberry pancakes for brunch. Sunday afternoon I made a cauliflower curry soup for the first time ever. Yum.My! Thanks again for your input, gals.
