Helping son make Burmese curry tonight and while cleaning shrimp remembered that my father, who has moved south, told me that down there they don't devein shrimp... Can that be true?
So, devein or not?
Also, I cleaned the chilies and wiped under my nose/ above my lip before washing my hands... Urghaa... Maybe I shouldn't be teaching cooking.

Oh, I deveined them! I couldn't quite believe it when he told me. But again, I guess it's what you know, what's in your realm of everyday.

I de-vein over and under (there are two veins on some shrimp species), but aside from the removal of the innards, doing so also butterflies the shrimp, opening up more surface area for flavoring.

This is one of those things that it depends for me. I started eating at Chinese restaurants. And by Chinese I mean no one in the entire restaurant spoke English except us when we were there. There are some shrimp dishes where they cook them with the shell still on and I asked how they had deviined them. They looked at me like I had two heads and said they just eat them. If it looks like it "needs" to come out I will but if it isn't big or obvious I will just ignore it. For the record they also eat the shell and all for things like salt and pepper shrimp.

I've had them both ways. I could (barely) get past the thought of eating the crap sac, but the texture does me in. If it was in some dish where the texture wasn't obvious, it wouldn't keep me from eating the dish knowing they hadn't been deveined.

Like Nancy- I do over and under. DS loves shrimp- So I made him do some of the work once by having him help devein.
Now he's really picky in restaurants and will ask if they are deveined before he orders.

Definately devain shrimp. It's shimp poop and sometimes if you don't get it properly devained it has a "gritty" taste/texture. Or maybe I have super sensitive taste buds.

Wash your hands repeatedly before touching anything else too!
One of the things I've discovered is that when I cut up chilis, even if I wash my hands repeatedly, it burns when I put my contacts in the next morning. It usually takes a day before it goes away. Next time, I'm wearing gloves!!

I'm in the south and I most certainly buy only deveined shirimp! Gritty shrimp just doesn't do it for me.

The vein doesn't bother me one way or another. At least the crap in the vein is cooked like the rest of the shrimp. It's not like you are eating a steaming pile of cow manure.

I don't like shrimp so when I buy some they are for ISO, I just ask him to take the legs off for me. He didn't used to devein them but now does, I did some for him and told him he should so now he learned. I don't think he cares but he does gross things like eating live oysters or sardines from the can without cleaning them first. I liked sardines as child but after finding they don't clean them well I won't eat them, cleaning them is too much trouble.

Speaking of which, is anyone else seeing ridiculous prices on shrimp? The grocery had 16-20s for sale for $17/lb! I live on the freaking coast!
16-20s sold for around $8/lb last year.

As much wine as you would like and heck yes on being the tie breaker. Some day I will move to Apalachicola, Florida. Fresh shrimp off the boat almost year round and at a fraction of food store prices along with some of the best fresh oyster eating direct from their bay.

I do for the big ones. Not much shrimp for me lately as I learned the hard way twice that I no longer tolerate a common preservative in frozen shrimp. It sucks because I can't really order shrimp dishes in a restaurant now.
If I'm paying $17/lb I will be getting big scallops not shrimp!
