I'm going to New Orleans next week for work. I will have 3 evenings and 1 full day to see the city. What do you guys recommend?

Definitely The Riverwalk - and of course, BOURBON STREET - at night. They should be gearing up for Hallowe'en soon.
Several Jazz Clubs and bars along Bourbon Street, and lots of street vendors to explore their goods/wares.
There's some good art galleries there, as well as side-tours.
