I love to create, or cook up, new things! I especially love to take food that's either already cooked one way, or that is usually cooked one way, and to cook it another way to add variety, ease of use, or more flavor. If you love to do this too, please share it on here!
Here are mine. My family loves these: Hash browns cooked in a waffle iron. Place loose or patty hash browns in waffle iron after spraying with some sort of oil; add garlic salt and black pepper. Allow to cook until browned. Easy to remove and taste delicious!
Take a rotisserie chicken and cut up leftovers into chunks. Heat ghee (or use butter) mixed with olive oil. Heat a skillet until hot and add chicken seasoned with garlic, pepper, salt and whatever you want really! Cook until lightly browned and serve over rice. This is really, really, good!

Here's another one that's good to me! If you like turnips then microwaving them just as you would a potato is good too. I don't remember how long it took to do this but it was good. Just place clean turnips in the microwave whole and puncture a few times to allow steam to escape and microwave (starting with a minute and increasing time as needed) when done, split turnip and serve with butter! Delish! I haven't tried this with rutabaga because its usually waxed, but it may be just as good.

I like to use leftover chicken in enchiladas. I'll cube or shred the chicken, mix with diced onion, a can of diced chiles, cheese and a little enchilada sauce (either green or red) and then I'll layer the tortillas, chicken mixture and more cheese and sauce like a lasagna and bake. Yummy! Sounds great! I will have to try this.

Do you love the taste of fried okra but not the mess or the calories from all the batter and oil? Bake it! Yes, it's just that easy and yummy. You can either chop the okra or bake it whole. I choose to bake it whole and from frozen even! Heat oven to 400 degrees and place okra on cookie sheet sprayed with oil. Then drizzle olive oil over and Season to taste and cook until browned! it's just that easy. From frozen, and whole, it takes around 30 minutes. I love this!

Roasted root vegetables.
Pare parsnips, turnips, yam, potato, rutabaga into disks or fry lengths.
Scatter onto a cookie sheet. Pour italian salad dressing (can be lite), sprinkle with garlic pepper and parmesean cheese then bake at 350 degrees for 45 minutes.
Bake time will vary with different ovens.
------ I partially burned mine last night and they were still good.

I have a recipe for stew from the Pioneer Woman. I've made it before and it was quite good. I don't have any stew meat, but I do have a number of grass fed ground chuck (DH says he doesn't like it). I decided last night when I came across the recipe again, I will make the stew with ground chuck. A side of mashed potatoes and call it dinner.

GG, I cube cheap cuts of steak to use for stewing meat. It's usually less "grizzly" and more tender than the regular stewing beef you get at the store. As long as there's some fat on the steak, you'll get some juices for making the sauce/gravy near completion.
I sear the meat ever so slightly before assembling with other ingredients.
I toss potato chunks, baby carrots, diced turnips etc right into the pot (I use a microwave crock-pot), but if you use a stove-top pot or electric crock, you can do it the same way.
When the stew's almost fully cooked, I add a water/flour mixture (about 1/2 to 3/4 cup) to stir in to make a gravy.
All the meat/veggies are right in the stew, and I serve it with dinner rolls.

I ended up making meat loaf yesterday. DH had complained that he didn't like the ground chuck from TFM and wasn't going to eat it anymore, we could just throw the remaining 6# out. At $6.99# I don't think so......well, he loved the meat loaf, have enough for sandwiches today and can probably get another dinner from what is left.
Sometimes its just best to ignore what DH has to say and do things anyway.

You can also always make chili if you have any left in your freezer. Once it's browned, and you add all the other ingredients (spices, kidney beans, tomatoes, onions, or whatever), he'll never know.
I often buy the "regular" ground beef for chili rather than the extra-lean - because with chili, once you add all the other fixings, you can't tell the difference.

DH gets these crazy ideas every once in a while. He was "that way" a couple of weeks ago when he decided the milk in the fridge was no good. He certainly wasn't going to drink it. I had some, it was fine. A few days later I poured him some, and he drank it without a second thought.
He did the same thing with Walmart refrigerated pizza. He told me he didn't want to buy it anymore because the last one made him sick. A couple months later he had forgotten all about that and put the WMT pizza in the cart.
