Any ideas for 3 lbs of left over ham?? Other than sandwiches? So far red beans and rice along with omlettes are my only contenders... Do you have any favorites?

Here's one I invented and call the Ham/Cheddar Melt: 2 Slices bread Ham slices (not too thick) Sliced tomatoes Shredded Cheddar or mozarella (or mixture of both) Toast bread until light golden - and no longer soft. Warm ham slices in microwave Place toasted bread on flat cookie sheet Place warmed ham on each piece of toast followed by sliced tomatoes Top with shredded cheese - place under broiler until cheese is hot & bubbly. Serve open-faced with favorite beverage.

Scottish My late Mom used to do something similar w/o the ham & w/ slices of cooked bacon crisscrossed on top. Lord I have not done that in forever. Also, she used Velveta but I would prefer the sharp cheddar and also add broccoli flowerettes these days.

Add it to Broccoli Slaw. Add Raisins, Craisins or Currants. Add Walnuts or Pecans. Coat with Green Goddess Salad Dressing. Pulverize some of your Ham and add Carrots, Broccoli, Stoplight Peppers and stale bread in your Food Processor. Remove and blend 1-2 eggs into it. Form the goop into patties. Fry at a high tempurature in EVOO just to brown each side (not cook the contents). Butter slices of bread as for grilled cheeses and put a slice of Pepper Jack and a par-cooked patty inside. After browning, remove the slice of bread against the patty and pour Green Goddess or Thousand Island salad dressing on and replace it. Slice in half and serve with a good beer. It's a whole meal.

she used Velveta
Velveeta does not contain real cheese so you're melting chemicals on your food. Try Nice n' Cheesy at your local Kroger. Also, use Nuefchatel instead of Cream Cheese to reduce your calory count by a third (creams up better in soups too).

No recipe here, but I would suggest scalloped potatoes baked with diced ham.

Veteran I said 'she' used Velveta. I use sharp dheddar-preferably lo fat (hat no fat).
For cream cheese I have used the low fat for forever (>20 years).

Oh wow the first thing that comes to mind is ham & cheese QUICHE! That's a staple in my house; we like our ham dinners. There are 3 of us, I buy the nice spiral sliced with glaze hams. I get about 3 ham dinners and 2 quiches out of each.
Google ham & cheese quiche. My fav recipe is from my grandmother's Better Home & Gardens cookbooks; and I'm not immediately seeing a similar recipe online. Just try a few different ones till you hit the ones you like.
