If you like Perogies, and like Lasagna, you'll like this dish: Ingredients:- 12 regular lasagna noodles
- 6 cups potatoes, diced
- 2 cups cottage cheese
- 1 egg
- 1 medium onion, diced
- 5 Tablespoon butter
- 1 1/2 cups shredded cheddar cheese
Directions:- Cook potatoes and noodles separately. Drain and set aside
- Preheat oven to 350 degrees F.
- Grease a 9 x 13 inch lasagna pan.
- In a medium size frying pan, heat 2 tablespoon butter and sauté the onions until they are transparent.
- Mash the potatoes, Add cottage cheese, egg, cooked onions and 3 tablespoon butter, mix together well.
- Layer noodles alternately with potato mixture. Sprinkle cheese over top.
- Cover with foil and bake for 15 minutes.
- Remove foil and bake an additional 15 minutes.
- Let stand for 10 minutes to "set" before cutting into squares to serve.

I was introduced to Perogies for the first time about 6 yrs ago. I think I might give this a try since the only lasagna I make/eat is vegetable so this might be a good change.

My DH was Ukrainian - so I had plenty of his mom's home-made perogie in my day - plus I love Italian food - specifically lasagna - so this recipe is a double "heaven on a plate" two-fer for me.

I became friends with a lady from Toledo, OH and she was talking about perogies and I just said I had never eaten them so she made up a batch for me. I loved them. She was always sharing. Sadly she passed away last year. So this recipe appealed to me right off the bat!!

Don't forget the big dollop of sour cream, BG ! They ain't Perogies without the sour cream smeared on them - or on the side for dipping.

Are you trying to kill us? Potatoes, pasta, butter, bacon, sour cream... I thought you loved us! Ohhhhh. You DO love us. That is all my favorite things in one luscious dish. Can I add lobster to it? And a big ole cheeseburger?
