There would be so much bacon grease absorbed into the mac & cheese. I don't think I would want to eat that. I love bacon, but not the bacon fat!

@lillylake you just turn the dish on it's side and let the bacon grease run off - problem solved

You can also partially cook the bacon in the microwave - on a paper-towel lined platter - just til it's semi-cooked (and still "soft") before assembling the mac/cheese/bacon pie.
Transfer the partially cooked bacon onto another platter with a piece of paper towel on it. The paper towel will absorb most of the excess bacon grease.
Once it's cooled enough to handle, you can braid your lattice on top of the mac/cheese. You still might get a bit of bacon grease in the mac/cheese combo - but not enough to really effect the consistency or make it "greasy".
