So far (crossing fingers) DS hasn't balked at taking medicines. He's only had a couple of incidents where he's had to take OTC Tylenol and whatnot. He's on prescription stuff now, but it's a capsule that we take apart and sprinkle on a spoonful of applesauce. He thinks applesauce is "mecinine" now.
DS used to eat whatever we put in front of him. Now he is getting picky. We don't do snacking all day long, we have 3 meals and one snack on generally the same schedule at home and at daycare. We make him try at least one bite of everything on his plate before he can refuse. If he decides no to eat what we made for dinner, too bad. He either eats it or goes without. I agree with a PP, I'm not a short order cook. Sometimes he skips it, sometimes he doesn't. If he's hungry, he'll eat. It won't kill him to skip a meal every now and then.
For breakfast and lunch, I usually ask him what he wants or give him a choice between two options. His favorite is peanut butter, honey, and banana sandwiches and an orange for lunch, so we have a lot of that. He never really gets the option of foods that are too bad for you, so his choices for breakfast and lunch are usually pretty healthy. Our daycare is on a state-monitored nutrition program, so I know she's feeding him healthy breakfast and lunch.
We do occasionally do sweets and treats. He loves coconut cream pie and peanut m&m's, so they are our go-to reward for extra special good behavior. I am of the opinion that if we cut off everything sweet, he will go hog wild when he gets the chance and turn out addicted to sugar because of it. We try to teach moderation and model the same behavior for him. I'm bad, because I love driving through Starbucks to get a large iced tea on the way home from daycare, and I get him a cup of water with a cake pop about once a week. Now my 3 year old asks to go to Starbucks all the time.

1. we do use the syringe. Unless we stick it down his throat, he finds a way to spit it back up. He doesn't understand the concept of "do this now and you'll be rewarded later" yet so bribery wouldn't work. (He's 2.5) He'll take pain relievers just fine - it's the prescription meds (and that damn bubble gum flavor) that he won't take.
2. I am not taking a hard line on eating. I was a picky eater and my mom did her best to accommodate. Eventually my palate got more diverse (now to the point where I eat way more types of food than she will). I'm not going to start WWIII over food - not worth it at all IMO. We'll continue to feeding him healthy/moderately healthy foods and snacks keeping in mind what he likes/will try. *IF* I take a look at the menu and notice that he'll be fed something that's not that great and *IF* I remember, I'll pack him something he'll eat. The school does serve some borderline unhealthy meals, but everything in moderation is okay. I certainly don't want him to be one of those kids who's like 8 and never seen ice cream before.

I think Cheetos are made of corn, so they're almost like a veggie! They're also orange... just like carrots! They're practically a health food! I do get all my veggies then!

I'm pretty sure no one here is going to rank Lunchables as the number one healthy food and I wasn't suggesting it as a daily lunch.. but in a pinch it's better than the kid not eating at all. I'm not sure about that. It's not going to hurt the little guy to miss a single meal, but if you start training him to expect to be fed junk whenever he's hungry that could be harmful. Plus, the sodium, saturated fats and chemical goo are not really something you want to push on a kid. If you're planning ahead to pack a snack, why would you bring such junk?
Jenny's trying to feed him healthy foods, so hopefully she doesn't even have stuff like that in the fridge in the first place.

We don't do lunch meat... blech. But I can cut up some cheddar and pack that with multi-grain crackers and raisins (he loves them all). I do appreciate all the advice though.

Score! They don't sell quarter pounders until 11. you'll have to do with the bacon, egg, and cheese biscuit.

Once a week won't kill him especially since you said he's eating healthy other times. It's nice he has a grandpa that spends time with him. If grandpa eats like that all the time, you won't have to worry about that particular issue for way too much longer...

Sinnce everything looks so much better through the mists of time, I can only remeber two occasions I had problems getting DS2 to take medication. At that time there were no flavor choices. So first time was for a double middle ear infection. We did the whole bearhug thing but it was so traumatizing (to both DS and I) that I went back to the pedi and asked for a different antibiotic. I had to listen to a long lecture about not giving in to the kid, but I got what I wanted. Second time we went trekking across Java and same kid needed, just like the rest of us, to take quinine. That stuff is foul. DS1 could be reasoned with, DS2 was too young for that. So I earned my failed MOTY award by feeding him the stuff on heaping spoonfuls of sugar. Kid had enough of a sweet tooth that he actually took it. Result: no malaria and he eventually outgrew his sweet tooth (for the most part).

The nursing home he was in used to complain to my dad that grandpa wouldn't eat any fruits or veggies other than corn and potatoes. My dad was like, he's 83 and he hasn't eaten them yet. 1. We hide it in food - yogurt, ice cream, i don't care - but it goes in.
2. I never subscribed to the opinion that a 2.5 yr old is trying to manipulate me, so while I didn't prepare 500 different meals, I tried giving them what they liked. And at that age they didn't know any unhealthy foods, so even what they liked was OK with me. Now, that I can reason with them better, it's a different story. I never had any interest in making a food a fight, a bargaining tool, a game. Food is food. You need it to live. End of story
ETA: I should have said USED TO hide it in food. Now, I have 3 little drug addicts who LOOOVE medicine

All of this over lunchables? We've had them in our house too. Am I forgiven if they were mostly for dh? I just gave my youngest Kraft macaroni and cheese one night this week. It isn't often but every now and then I give her something crappy....the fact that it was the night that I worked late and don't feel like cooking had nothing to do with it....
