First - yes, one of my parents came from the back woods of the Deep South. Second - I apologize to no one for my love of this much maligned lunch meat.
I either cook it on the BBQ grill as a whole loaf, or make what I call Spamerschnitzel. Due to the popularity of a particular hot dog chain, most Americans believe that a wienerschnitzel is a hot dog or at least some kind of sausage. Not true. A schnitzel is a cutlet which is breaded and fried in oil, what most Americans would call "country fried".
My favorite way to prepare Spam is to cut the loaf lengthwise into three square patties. Coat the patties in flour, roll in a beaten egg, and dredge through seasoned bread crumbs. Pan fry in olive oil until the crust is a golden brown.
Anybody else have any recipes for Spam?

I like it sliced and fried on toast. My mother used to stick whole cloves in it and bake it like a ham. I'll have to try Spamerschnitzel, it sounds good, although I'm sure my husband won't eat it.
