Tonight: Take out from ? Saturday: The shrimp dishes mentioned yesterday I didn't get to last night. Sunday: Elk steak (free as it was given to us), courtesy of DH's Traeger Grill. Side dishes: Probably a frozen veg $1/bag and ranch style beans for DH $.87/can.

2/8 Sat I 'plan' on chicken BUT I am not feeling it. Will see if anything reaches out to me when I shop today.
I do know next week will have several days of broccoli soup as a meal or side since my good mkt has broccoli for 0.29/lb.

Chiv....I tried the sausage and leek recipe tonight. We didn't care for it. It took awhile to fix etc. but it was actually tasteless!!! It did make a wonderful sauce, but not much flavor with it, and there was nothing to do with the sauce once you took the sausage out. By the time I simmered it for 15-20 minutes the leeks were just limp and didn't provide any flavor.
I'd skip it if I were you.

Got NO inspiration at the stores on Sat - didn't help I was rushing as it was already snowing. Sat dinner was chicken salad plate - leftover chicken from a batch of soup.
NO clue about tonight. Have not done my weekly meal plan but general plan is 2 chk, 2 fish (tuna this week), 1 ground meat/meat & 2 veggie.

Tonight I made lemon Parmesan boneless skinnless chicken breasts.
Chicken breasts (from a bag of frozen breasts)--$1.43/breast Lemon juice--$0.34/breast (squirted whole little lemon in the pan and made 3 breasts) Sprinkling of salt and Parmesan on each breast--($0.10?)
Can of green beans--$0.49 for 1/2 a can
Package of chicken noodle stuff--$0.34 for 1/3 package (will eat other 2/3 with the other 2 pieces of chicken)
Total/serving--$2.70

I'd skip it if I were you. sorry it was disappointing, but thanks for the heads up! dinner tonight was a couple slices of pizza at the pub, post-game. pizza is free to hockey teams (2 rinks in the area that have adult women's league games Sunday nights) for 2 pies/team. I also had a couple Jameson 'n ginger ales while we were there. those ran me $14 plus tip. I'm home now, and having a small plate of cheese and crackers - probably another $3 for the plate.

Ate veggie from the freezer on Sun - stuffed zucchini.
2/10 Mon is going to be chicken broccoli stir fry. Chicken is fro that batch of soup and the broccoli is the 0.29/lb stuff I bought Sat. S/b $1 or less even w/seasonings.

Last night was Betty Crocker Mac and cheese (free) with 1/2 lb ground beef (IDK, DH bought it).
Tonight will be yummy chicken thighs ($1.99/lb) stuffed w/ cream cheese (.99/container will use 1/5 of it), wrapped in bacon (IDK, DH bought this, too).
Tomorrow night: Maybe chili (.99) and beef tamales ($2)?
Thursday: Something easy b/c of a meeting that night.
Friday: Dinner at ? for Valentine's
Saturday: My BD party!!! 70's food: Meatballs in the crock pot, cheese fondue, pizza, chips, etc.

2/13 today is ging to be leftover tuna and egg(s) some way. Not sure which is lunch and which is dinner. Will add veg, salad and fruit to complete each meal. May have english muffin or rye toast with one or the other.

coffeegrl - I don't like carrots so I don't have a recipe of my own for that, but I tend to have very good luck with recipes posted on the various pages of about.com. see if this one will work for you - linkI haven't decided on dinner tonight. maybe y'all can vote? option 1 - bell peppers stuffed with taco-spiced ground turkey, with black beans and rice on the side. option 2 - spaghetti pie with ground turkey, peppers, mushrooms, spinach. will break down the cost of the winning menu item later.

Thank you! Also, does anyone have a yummy but easy recipe for caramelized carrots? Coffeegrl - I like to roast my carrots in the oven while I'm prepping the rest of the meal. Spread them out on a baking sheet lined with foil, drizzle with olive oil, sprinkle with salt, pepper, and seasonings of choice (in your case, a little brown sugar). Stir to coat and pop into the oven (preheated to 375-400). Give them a good stir every 10-15 minutes until they are cooked. I like mine to get a little caramelized on the bottom before I take them out. I've used baby carrots and whole carrots cut up in smaller chunks. Iggy aka IG - I may have to try your recipe this weekend...we have a cooler full of beer leftover from a birthday party. I made beer bread already this week... Tonight is Polish Cabbage Noodles - egg noodles, cabbage (on sale for .19/#), onions, butter, and sausage.

I took leftover meatloaf, warmed it with some bbq sauce, and used it for sloppy joes. It was really pretty good.

since there was only one vote, the stuffed peppers won out.
cost for everything cooked: $4 94/6 ground turkey $1 green bell pepper $.25 onion $.25 shredded cheese $.50 white rice $.50 low salt black beans $.50 various spices for the turkey/beans.
= $7 for a ton of food.
leftovers: half a stuffed pepper 2c cooked white rice 1c cooked black beans 2c taco-seasoned turkey
I'll use the leftovers in various things over the weekend. sorry I can't break it down any better than that.

I do not have a SO so it is just me tonight. Sort of glad because experience w/going out 2/14 has been bad, food, surly service, overpriced menu and usually really crappy weather.
My plan is making veggie (broccoli, mushroom, tomato w/olive oil & garlic) pasta - everything bought on sale & also had a coupon for the pasta w/a salad (greens only bought on sale). Total cost (did check receipts) is 0.87.

Tonight is our community Valentines Day pot luck dinner. I signed up to bring the potato casserole. I'm doubling the recipe and will keep the overflow from the baking dish for us. I plan on putting the overflow into small containers and pop them into the freezer.
My cost contribution to dinner was $25 for about 30 people attending so, about $.83 per serving. It will be even less once I add what goes into my freezer.

We had our granite countertops sealed yesterday, so there won't be much cooking done today. I have some mini meatloaves in the freezer, so maybe I'll pop those in to bake and add a salad. It's supposed to be a high of 60 today, so something on the grill sounds great too.....decisions decisions!

I'll play today. I'm making the sesame chicken recipe that Iggy posted in post # 120. I'm making a triple-ish batch. I made this once already and I think the texture will freeze ok.
2.9 lbs boneless skinless chicken breasts $5.19 3 eggs $0.60 green onions $0.75 sesame seeds $0.79 cornstarch/soy sauce/veg oil/sesame oil/rice vinegar $0.50 ? ginger/garlic/brown sugar $0.50 ?
Total: $8.33 Expecting 10-ish servings so $0.84 per serving
Will make fried rice to go with it. 1 cup of brown rice $0.50 ? veg oil $0.15 ? 2 eggs $0.40 leftover green onions from above $0.00 handful of frozen peas $0.30 ? soy sauce/sesame oil $0.30 ?
Total: $1.65 Expecting 6-ish servings so $0.28 per serving
One serving of tonight's dinner: $2.77. Even if I round up some to account for the inaccuracies of some of the seasoning type ingredients, it would be 3 bucks for dinner tonight easily.
Now for tomorrow night I'll do red beans and sausage in the crockpot. 1lb red beans $1.50 1 lb sausage $3.29 spices $0.50 ?
Total: $5.29 Should get 8 servings easily so $0.67 per serving. Will have to freeze at least half of that too.
I also saw the stuffed chicken with bacon that was posted. I might try a variation on that next week. I have a recipe for making my own Hidden Valley Ranch seasoning mix (to get rid of a lot of the sodium). I'm thinking that and using maybe half cream cheese and half greek yogurt, or all greek yogurt?, and then cut down on the bacon (one piece per chicken maybe?). It would be low cost and fit into my diet plan well. Just know that I'm still lurking on this thread because there really are some great dinner recipes on here!
