I always just scoop the top/middle out of the loaf. If there is a way to actually make bowl-shaped loaves I'm clueless... But it is an interesting concept!

Yeah, I've only ever done it (and seen it) the cut/scoop method. You can make different sizes for different items. Like individual bowls of soup make 5-6" round loaves and using a knife cut out a hollow in the middle. Or make larger loaves for dips.
