This is a really great idea - especially since you can make a week's worth in advance. Great if you want to take a salad to work:
THE ARRANGEMENT
From BOTTOM to TOP: Dressing Shredded carrots Cherry tomatoes Sunflower seeds Hard boiled eggs Baby spinach or lettuce DIRECTIONS
1) Arrange ingredients in a large mason jar 2) Store in fridge for up to a week 3) When ready to eat: shake jar, place on a plate, and eat! You can make any arrangement you want… you can add red onion, cucumbers, radishes or peppers. Always remember to put the dressing in first at the bottom and the lettuce (or spinach) at the top — a MUST. As long as the dressing does not touch the greens this will stay fresh in the fridge for up to a week!.

I'm pretty damn hesitant to put dressing in the same container as greens (touching or not....) and then seal it off for a few days. can you post back how it all turns out when YOU try it? please and thank you

I have tried it. The ones I made were in the fridge overnight/1 day/2 days/3 days - that's 4 salads I made.
they were still fresh, and the dressing didn't touch the greens at all since it was at the bottom of the jar, and the greens were on top. I kept the jars upright (even in transit) and only turned/shook them just before opening/eating. As long as the greens don't absorb any of the dressing it stays "freshly made" for up to a week (I've never had it last that long since it's usually eaten before the week is up - but if you work a five-day job, you could make 5 of them on a Sunday to last you the week. As long as you put the veggies that won't absorb the oil (cherry tomatoes/cucumber/onion, etc in the jar first, and lettuce/spinach last, it won't get "soggy".

cheers, thank you. I'll still likely try it out myself with heartier/lower maintenance greens like iceberg lettuce for the first time!

It doesn't look like there is enough room there to shake it up? That was my first thought! But the concept is interesting. Personally, lettuce doesn't like my stomach, so my "salads" are all fresh vegetables and/or fruit with dressing, so the wilting of the lettuce isn't a concern. But this is an idea I'd suggest to other normal people who can eat lettuce!
