Zucchini Casserole
4 cups grated zucchini sprinkle of salt 4 eggs beaten 3 cups grated cheese (save 1 cup for the top) 1/3 cup bisquick sprinkle with garlic power
Mix together in casserole. Put reserved cheese on top. Baked in covered casserole at 375 degrees for 45 minutes. Take lid off for 10-15 minutes until brown.

I think I'll try this tonight. DS is tired of hamburger (I apparently got in a rut and we had it several times the last two weeks) and I forgot to pull out some chicken.

This is actually my new favorite breakfast. It warms up in the microwave very well.

Any suggestions for a substitute for the bisquick? I love the recipe but we don't "do" packaged mixes

lol, I don't like bisqick either. I make my own mix when I need it.

I have a similar recipe, but instead of a casserole, they are made into little patties and fan fried. Will have to give this casserole a try!

Greek Spinach Dip
Ingredients
1 cup plain Greek yogurt 1/2 cup mayonnaise 1 package chopped spinach, thawed 1 packet vegetable soup mix 1 round loaf pumpernickel bread
Preparation
Preheat oven to 350 degrees. Drain the thawed spinach of excess liquid. Mix together all the ingredients, except for the loaf, in a medium bowl and refrigerate until you are ready to use. Hollow out the of bread and cut insides into large cubes. Place shell on baking sheet with chunks surrounding and bake in oven on 350 for 10 minutes. Allow to cool and fill with spinach dip just before serving. Place on a platter and surround it with the chopped, baked bread pieces. You may want to chop extra bread, crackers, or vegetable crudités
