I need some help here. My Future Son in Law (FSIL) is a farmer. DD just showed up with 10 yellow zucchini and 10 green zucchini. Does anyone have a good method for freezing or somehow preserving zucchini?

My mom shreds it and freezes it for use in muffins/bread. I don't know if she freezes any non-shredded zucchini.

I have only ever frozen shredded. Or make bread or soup, etc. and freeze that.
I stir fry zucchini almost every day. So far this week I've had that zucchini and other roasted veggie bake from the recipe thread, zucchini spaghetti, made a double batch of soup that includes zucchini and froze half.
Today I found a few recipes for grain free zucchini bread, and a veggie wrap recipe close to the one I usually use, but that adds zucchini.
Im keeping up so far, lol.

I guess FSIL really likes zucchini bread and zucchini in stir fry. I will try shredding it and see how that goes.

I make zucchini bread and freeze it. I also make a chocolate zucchini bundt cake I also spread the wealth to my co-workers and neighbors.

If you have (or know someone who has) a dehydrator, it dries pretty well. I can be re-hydrated for recipes like bread, soups, ratatouille, etc.

Will it keep until August 8th? That's "National Sneak Some Zucchini onto Your Neighbor’s Porch Day".

If you dehydrate it, just keep in mind that even dehydrated zucchini only keeps for a week unless you freeze it (crazy--it's the only one like that, everything else will keep for quite a while in just an air-tight container).
If you're going to use it within the next 6 months, quality won't suffer too much if you just slice it or shred it and then freeze it (freeze in proportions you'll use in your recipes). If it might be longer before you use it, you'll want to blanch it and then put it in an ice bath before freezing or dehydrating (and then freezing).
I've also seen a recipe for zucchini pickles that looks pretty good--zucchini, vinegar, and various spices (mustard seed, peppercorn, etc).

If you are going to shred it and freeze it, packing the baggie with 2 cups is good. Most recipes call for 2 cups of shredded.
I have a recipe for z pie. There's quite a bit of mustard brushed on the crust before the other ingredients are put in. Brings lots of flavor where not much exists.
