Does anyone have a good recipe for cabbage? I am a new member of a farmshare, and cabbage is one of the veggies that I got this weekend. I hate coleslaw and I don't like it in fish tacos, but I am at a loss for a creative way to use it. Any suggestions would be appreciated! BTW - the farmshare is great, if you have an opportunity I highly suggest that you participate. It is making me a much more adventurous cook, and I actually bought a canner and have been canning stuff.

I like to just slice it thin, throw some chicken in, a little evoo, salt, pepper...
I just made stuffed cabbages Sunday, does that interest you?

Try a slaw with an oil and vinegar dressing instead of a mayo-based dressing. Offset the bitterness of the shredded cabbage with sweeter shredded vegetables like carrot, tomato, golden or white beets, cucumber, whatever you have around or is currently fresh from the CSA or farmer's market. Also toss in some raisins or dried cranberries and some feta cheese.
Use the cabbage to make cabbage rolls. Any basic cookbook could tell you how. The filling is limited only by your imagination and your taste buds. Good luck to you!

I'm a fan of an Irish dish called "colcannon" - mashed potatoes with cabbage and onion. boil potatoes for mashing, and drain slice the cabbage and some onion thinly, then saute in butter (I add garlic too) add your butter, milk/cream, S/P and the sauteed veggies to the drained potatoes. mash and enjoy

I've never tried, can't imagine why not though. I buy green out of habit, but I can't say I've ever noticed a difference in taste. it might look a little funky with cooked red cabbage in a pile of mashed potatoes, but it might taste okay. try it out and let us know

I used to make a cabbage soup that was considered heart healthy and makes you lose tons of weight. I doctored it up some but man that was delicious soup! It was for DH when he needed to lose weight but I ate it as much as he did. If you like soup I'll look up the recipe (the way I made it) and post it here for you.

Chiver - Here it is:
Cabbage Soup Recipe
Shredded Head of Green Cabbage
Chopped Scallions (entire bag)
2 large Chopped Spanish Onions
Chopped Celery (entire bag)
Sliced thin Carrots (at least 5 carrots to an entire small bag) - OPTIONAL
Garlic (at least 3 cloves)
Splash of Wine (sweet white Zin is what I preferred)
2 Cans of stewed or chopped tomatoes
2 Green Peppers (seeded and diced)
V8 Juice or tomato sauce (1-2 cans depending on how much soup you make) I use 1 can of V8 Juice and 1 can of tomato sauce (Hunt's)
Bay Leaves (at least 3)
Ground Black Pepper
Salt (ONLY if you don't use the Lipton Onion Soup Mix)
Cayenne Pepper for punch
Chopped Parsley
1 Pkt. of Lipton Onion Soup Mix
Water if liquids don't make it soupy enough
Toss it all into a large soup pot and cook it until veggies are tender. The longer you cook it the better it tastes. Season to your specifications and you can add Thyme, Sage, Basil, etc. if you like.
This soup along with proteins (chicken, fish type meats) and he lost 20 lbs. I lost weight too but I wasn't trying. Just loved the soup!

I've seen a recipe for unstuffed cabbage rolls on FB that looks like it would be up my alley. Cabbage rolls take to long to make for me.

DH doesn't like them either so I just left them out and the soup was wonderful. This was back when DH wouldn't eat any veggie but corn (not really a veggie IMO as it's a starch) and potatoes (another starch). He's come a long way baby! Yes - that is how scallions come here too. All of them - green and white parts. V8 juice has more than just tomato in it (and honesty too much sodium but it just works and is still very healthy but don't use salt! if you use the juice and Onion coup mix unless you think it needs it). I buy V8 in 6-pack cans because I love it for Bloody Mary's too. But you can buy it in single plastic juice thingies like at a 7-11 like most juices if you don't want to have too much left over.

I buy cans of pineapple juice for baking/the martini bar that lives in my garage, I wouldn't ever drink it otherwise. I could do individuals of V8 too....especially if it's got a great shelf life, my dad would be over the moon if I had tomato juice for T-day brunch lol.... as far as not cooking with carrots when the recipe calls for it........ick, no. a few years back, I finally got a cousin to write out the recipe for the chicken 'n dumpling soup that is standard fare for Acadian winters. it's the fricot recipe that's in a "chicken soup" thread in the recipes board, if anyone wants to check it out. I'd been missing a few of the spices until that point. anyway, one weekend, my parents were actually in Canada and I was making fricot just for me. I decided to leave the carrots out entirely so I wouldn't have to pick around 'em, and ick.....no.......I ended up pitching most of the batch. it just wasn't anywhere close to right.

Actually the original cabbage soup recipe doesn't call for carrots. I love carrots and I just add them because I love them. The soup tastes the same regardless so it's up to you. That was just my altered recipe that I gave you. I alter all recipes but they are always better when I do. At least to me. Here is the original: 6 large green onions 2 Green Peppers 1 or 2 cans of diced tomatoes 1 bunch of celery 1 head of cabbage 1 package of Liption Onion Soup Mix 1-2 cubes of bouillon, if desired Season to taste with salt, pepper, curry, parsley, etc.

Cabbage as a side - Saute half an onion and jalapeno for 2 minutes till they are soft and add shredded cabbage to it. Add a little salt and steam a little till it's half cooked. Finish with a little bit of fresh grated coconut. If you don't like the jalapen0, you can add crushed red pepper flakes .

So, you definately can use purple cabbage. I added bacon. Fried the bacon pieces, then sautéed the cabbage and onion in the bacon fat. I forgot to add garlic! (Will next time...) but omg... Seriously yummy.
I knew the kids would squack, so i didn't mash it in, just scooped it over mashed potatoes.

Ingredients: One med. cabbage, one med. onion, one ring kielbasa/smoked sausage (sliced into coins), one twelve oz. pkge. egg noodles. Optional additions: grated parmesan cheese, vegetables steamed until done ( for example, broccoli, cauliflower, peas, erc.)
Cut cabbage into eight wedges, remove core bits, then steam until tender... meanwhile, boil some egg noodles until done in a second pot. In a skillet at med.-high heat, saute some sliced up smoked sausage/kielbasa with some sliced onion. When kielbasa is browned, stir in the cabbage and continue to stir-fry for a couple of minutes, then add the mixture to the egg noodles and toss all together. Some people like to sprinkle grated parmesan cheese over all. Serve with rye bread.

heat some EVOO...add sliced onions...then add lots of cayene pepper,...and black pepper...then some garlic that you smash and chop...then add chopped cabbage...walla....awesome!
