Yesterday I made homemade mac and cheese and pulled pork sandwiches. This time though I just put the pork shoulder in a crock pot with water and salt and pepper and then pulled and added the sauce. DH thanked me for dinner, and the BF said it was great. I felt proud. It was so easy and DD is eating it right now and said delish.

Don't know what my mother would have said but my grandmother would be horrified, a meal too her was meat, veg and starch.

Well, i like white pasta, white rice and potatoes and i see no reason to not eat them. I like them too, actually, I love them, but there is a reason I should not eat them, or only eat them in small quantities. For those of us who are insulin resistant, diabetic, or have other metabolic issues, they are not the best thing for you to eat. After your eat them, your blood sugar spikes, and then quickly crashes, and then you end up hungry a short time later, even though you don't need the extra calories. |

My doctor told me yesterday I need more salt in my diet, so I went home and ate chips and salsa. I hope that's what he meant! ;-)

when I was pregnant, I remember my ob/gyn telling me that I have a mild version of alphathalsemia (sp?) and that I need to get more iron in my diet. Ummmm, I can only choke down so many burgers/kosher hot dogs/meatballs....

I like "the whites" every so often, too. I mean, black beans with brown rice is OK, but somehow, white rice works better. I'll use all whole grain pasta when DH can't see it, like for homemade mac and cheese. Otherwise, I compromise by mixing the two.
Mostly, thought, I stick with the darker grains, sweet potatoes, etc over the white stuff. My blood sugar seems to prefer it that way. As the daughter and sister of diabetics, I'd rather not get to the point of needing insulin.
