My bag of Quinoa just arrived at the post office So, now I need some recipes... Main dishes, sides, desserts (can you make a quinoa dessert? I'll give almost anything a try), whatever. I know I can just google, but I always like to gather some tried-and-true recipes first. The good thing about a big family--if my son and I don't like the quinoa, we'll just give it to family so it doesn't go to waste!

<b>Quinoa Tabbouleh</b><br><br>1 cup quinoa, rinsed well <br>1/2 teaspoon kosher salt plus more<br>2 tablespoon fresh lemon juice <br>1 garlic clove, minced<br>1/2 cup extra-virgin olive oil <br>Freshly ground black pepper<br>1 large English hothouse cucumber or 2 Persian cucumbers, cut into 1/4" pieces<br>1 pint cherry tomatoes, halved <br>2/3 cup chopped flat-leaf parsley <br>1/2 cup chopped fresh mint<br>2 scallions, thinly sliced<br><br>Bring quinoa, 1/2 teaspoon salt, and 1 1/4 cups water to a boil in a medium saucepan over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. <br><br>Meanwhile, whisk lemon juice and garlic in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.<br><br>Spread out quinoa on a large rimmed baking sheet; let cool. Transfer to a large bowl; mix in 1/4 cup dressing. DO AHEAD: Can be made 1 day ahead. Cover remaining dressing and quinoa separately; chill. <br><br>Add cucumber, tomatoes, herbs, and scallions to bowl with quinoa; toss to coat. Season to taste with salt and pepper. Drizzle remaining dressing over.<br>

Thank you, that looks good! I'll probably wait until the tomatoes and cucumbers are ripe in the garden for this one (should be just a few more weeks, I hope!) There is nothing like stuff fresh from the garden. The only thing I'd have to buy is the parsley and garlic (my mom has a mint plant from one that was started long before I was born, I'm going to try to have it take over the area right in front of my house).

To add a little flavor to Quinoa i'll make a quarter of the cooking liquid chicken or vegetable stock.

I think of Quinoa and Tabbouleh like stir fried rice. What goes in it depends on what is in the fridge. I've added all of the things listed in prior post at some point. But also marinated artichokes, dried cranberries, feta cheese, walnuts, chopped fresh veggies such as brocolli, etc. Now I don't add all these ingredents at the same time. I've done a mix and match. Enjoy and just experiment.

I use quinoa for anything that calls for a side dish of rice/barley/couscous/etc. 1. always rinse the quinoa. No foam = good. 2. we usually cook it in broth instead of water. 3. I taco seasoning in it for a variation of Spanish rice. 4. my kids used to love it with mixed veg. mixed in it. I'd add a cup or so of frozen veggies at the start. 5. the chicken quinoa chili recipe someone posted on a different thread was awesome. queenbeecoupons.com/crock-pot-slow-cooker-quinoa-chicken-chili-recipe/ the quinoa was perfectly done.

thugkitchen has a recipe for oatmeal with quinoa and it's really good. -- you have to look past all the bad language, but the recipe is good.

Always looking for new recipes! I found this recipe for hot cereal as well (link: food52.com/recipes/17478-breakfast-quinoa-with-oats-and-chia-seeds ) It's for one serving, so I just multiply it and make a big batch, put it in jars for breakfast at work during the week. It's been a while since I've made it though. Breakfast Quinoa with Oats and Chia Seeds Serves 1 1/4 cup cooked quinoa 1/4 cup uncooked rolled oats 1/2 cup milk 2/3 cup water 1 tablespoon chia seeds 1/4 teaspoon ground cinnamon 1 packet Truvia or 1 tablespoon brown sugar 1/4 teaspoon vanilla extract 1 medium banana, sliced 1/4 cup chopped pecans In a small saucepan over medium heat, combine the cooked quinoa, rolled oats, milk, water and chia seeds. Cook for 5 to 6 minutes, until oats and chia seeds have absorbed most of the moisture and the mixture is thickened. Add in the cinnamon, Truvia or brown sugar and vanilla extract. Cook for 30 seconds more. Remove from heat and stir in the banana slices. Spoon into a bowl and top with the chopped pecans.
