This morning I made "Fruffins" (French toast muffins). They were really easy to make, and really good. I got the recipe from www.wineandglue.blogspot.com. 4 cups of bread, torn into pieces 6 eggs 1/3 cup half and half 1/3 orange juice 1 tsp. vanilla 1 1/2 cups frozen blueberries Whisk the eggs, half and half, orange juice and vanilla together. Fold in your bread until the bread is soaking up the liquid. Then gently fold in the frozen blueberries. Spray muffin tins with non-stick spray. Put the mixture into the muffin tins and bake at 350 degrees for 20 minutes. Makes 12 fruffins. You can make a glaze with powdered sugar, orange juice and whole milk. I just used maple syrup. That is the exact recipe. I actually added a bit more bread because I felt like I had too much liquid. And I have really large muffin tins, so mine baked for about 25 minutes, and I only got 8 fruffins. This would be a super easy recipe to double or even triple. Perfect for when you are having guests for breakfast or brunch.
