Mine has been sitting a lot during this food testing thing I'm doing i learned ll the raw kale I was doing was actually not great for my thyroid. I tend to use mine more for nut stuff lately. Will get back to other stuff soon, hopefully. Although its doubtful I'll ever make green smoothies anyway, sorry I'm no help

DH has one. He mixes fruit with his choice of greens. I don't think he's actually got a recipe. Lately he's been using mango as one fruit, w/ strawberries or blueberries as the other. 8+oz of water. And a lot of greens. He rotates between kale, chard and dandelion greens.

"A glass of sunshine": 1/2 a lemon, 1/2 an apple, 1 peeled cucumber, a 1/2 inch piece of fresh peeled ginger, a stalk of celery if you want, and as many sweet greens (spinach, lettuce, parsley, whatever you like) as you can stuff into the machine. A little bit of water to get it going. Ice if you want.

Can I ask a stupid question - I like smoothies (fruit/yogurt based) but I don't drink them often because of calories. I think they are sort of like ice cream - a treat. I don't drink them for the vitamin content or anything like that. It's like healthy ice cream in my mind. ![](http://images.proboards.com/new/smiley.png) Is a vitamix smoothie (say, veggie based) something people drink because it's tasty? Because they want the vitamins? Does it help fill you up? What about the calories? I'm just curious WHY people drink veggie smoothies. Sorry if this is a stupid question. I'm just intrigued.

I don't have a Vitamix. I have a juicer and I like it. I don't throw the pulp away. I use it in some baking recipes and also to make dog treats.

Understood thyme. I actually would rather eat vegetables. I tend to use it more on fruits and nuts.

Vitamix "soft serve" ice cream: put a carton of yogurt in the container. Add a few frozen strawberries and blend. Keep adding frozen strawberries a few at a time until you get a soft-serve consistency you like. Add sugar or stevia if you want. Eat by itself or serve over other fruit, oatmeal, granola . . . or freeze in popsicle molds. Works well with other frozen berries and fruits - like mango and a *pinch* of cardamon. Yum. You can also substitute a block of tofu for the yogurt if you have dairy allergies or intolerances (organic tofu only! 90% of non-organic soy in this country is GMO ).
Vitamix creamy vegetable soup: steam (in a steamer basket on the stove) a couple of large handfuls of your favorite vege over simmering water or stock. When the veges are soft, toss them in the Vitamix with the steaming broth, a carton of yogurt or a block of tofu, and some salt and herbs/spices you like. Blend and adjust the consistency to your liking. Blend a full 5 minutes on high and the soup will be steaming hot. Serve with croutons, crispy bacon bits, a dollop of sour cream, a drizzle of walnut or truffle oil - whatever floats your boat (and your tastebuds). You can also roast veges in the oven for a deeper flavor, but this takes longer. Be sure to add all the pan juices if you roast. My favorite soups done this way are asparagus, broccili, butternut squash and potato-leek.

I ate a kale salad last night with cranberries and nuts. It was delicious. was it baby kales - or massaged kale? Kale seems a bit strong just shredded. What kind of dressing? My wife does some sort of massaged kale. The first time she made it I was skeptical, but it is friggen delicious.

I don't know - I just bought the bunch of kale. I guess it is massaged.
Because kale can be a little bitter, I make a balsamic-olive oil-honey (or maple syrup) dressing. The sweetness balances the whole thing out.

I don't massage my kale - lol. ![](http://images.proboards.com/new/wink.png) I just toss it with dressing and let it sit for an hour or two. Recipe: shredded kale, shredded carrot, dried cranberries, a seeded and chopped tomato, toasted pine nuts and a lemon or sherry vinegarette. The amounts of each depend on you. I agree, YUM!
