This is really easy to make and gooood!
1.5 lbs ground chuck (you can use anything you want, but I like it with ground chuck) chopped onion chopped green pepper 1 jumbo egg, or two medium eggs handful of oatmeal (sorry, I don't measure)
Mix with your hands until well blended. Form into a bread pan, or a meatloaf pan.
Mix together:
about 1/3 cup ketchup (if you need more, you can add more of everything - just go by taste) 1/2 tsp dry mustard 1/2 tsp nutmeg brown sugar to taste (I use about 1/4 cup)
Pour over top of meatloaf and bake for 1 hour at 350 degrees F.

I've got meatloaf in the oven right now for a late dinner tonight. Brilliant minds think alike! I'll have to try your recipe next time. The topping looks good!

It really is good, busymom. I've made it and taken it to work for people to share when we'd have "eats". It's always gone!

I just made meatloaf today. I use 2 pounds of ground beef, two beaten eggs, onion soup mix, bread crumbs, Worcestershire sauce, ketchup and water. After I form the loaf, I top it with a ketchup, brown sugar and Worcestershire sauce topping.
I do not bake my meatloaf in a pan. I line a edged baking sheet with non-stick foil and just form the loaf by hand. I use really lean ground beef, but any additional fat runs off onto the pan so the loaf isn't greasy.
DD is super picky, but she loves my meatloaf.

I love meatloaf, but I like big chunks of bread in mine. My ex liked oatmeal though. Might try your recipe next time, don't think my son has had it with oatmeal before.
A tip I got from Sharon--bake the meatloaf in muffin or mini-loaf tins if you want to put some in the freezer for lunches or the nights you don't feel like cooking. I had some for lunch that way the other day and the guys at work thought it was a great idea.

I've made meatloaf in a muffin pan, as well, apple. With just mother and I, the loaf works out a bit better. I've found the oatmeal keeps the meatloaf a bit more moist than using cracker or bread crumbs. Larger chunks of bread might work the same way.

I am recovering from a long period of illness, so I dont have the strength to fuss. My easy meatloaf:
1 lb. ground beef 1 egg 1 can of French's fried Onions (put it a plastic bag and break up) some ketchup some worcestishire sauce
Mix all together, put in ball on heavy duty foil on baking sheet. Bake at 350 for 45 minutes. Let stand for 5 Minutes and then slice.

I make mine with oatmeal - since it absorbs the fat/grease and stays moist - toasted bread cubes/croutons would work too if you want bigger pieces of bread (which apple prefers).
I've never used nutmeg, but I have used a mixture of ketchup, brown sugar for the topping - in the meat/onion/bread/egg mixture, I've sometimes added a bit of Oregano - which adds an interesting flavor.
I've baked it both in a loaf pan & muffin tins (for individual portions).
