Yesterday we picked up a rotisserie chicken for an easy lunch and planned to finish it off in salads this week. Too bad the thing was dry as a bone! So is there any salvaging it? I like to make chicken enchiladas or chicken tortilla soup (KGB's recipe! ) with leftover chicken but I don't want to ruin a couple family favorites since were really just getting back to cooking regular meals.

Yeah, i bought one of those once two and it was like the turkey on Christmas Vacation with Chevy Chase where it literally exploded with steam and they were all chewing and chewing. Not much you can do other than toss the whole thing into a pot of water and boil it into soup.

Quite frankly, I'd take what was left and the receipt and go to the store and ask for a refund.
DH and I bought two lobster tails at Costco about a month ago. One was fine, the other was mushy. I took my receipt in and they reimbursed my account for half the purchase of the two tails that were packaged together, but they did ask that if it happened again that I freeze the bad product and bring it in with the receipt.

We could have a lot of soup this week it looks like. I have bean soup with last weeks ham bone in the crockpot now. I'm tempted to try to simmer the chicken in enchilada sauce and then make enchiladas. Hmmm...

Mix it with a little more mayo that you normally would use in chicken salad and let it sit overnight before having some. or...bring it back and get a refund. I brought one back that wasn't fully cooked yet, not too long ago. sent from my electronic distraction

That would probably work well. I've cooked raw chicken in enchilada sauce before, but I think it makes the chicken too mushy, so now I bake it then heat it in the sauce. So, dry chicken would probably turn out perfect if you let it simmer long enough.

1. Sauce the heck out of it (BBQ sauce, mayo for chicken salad, etc.) 2. Return it and request replacement chicken or refund. 3. Make soup with the chicken and the bones, or at least broth. 4. A lovely treat for pets (deboned, deskinned)
