Yesterday WWGB mentioned in her thread something I had been looking for. Slow roasted filet mignong with aioli something...
Paleeaze tell me, tried to google, they all want me to pan sear it or bake it or grill it.

They all want you to do this because it's the correct way to treat this piece of meat. Long, slow cooking is for less tender cuts that need time to break down the collagen fibers in the meat. The filet is already very tender - and has basically zero fat. Cook it long and slow and you will have a dried out mess - for your $22 per lb
