I got this recipe from a Mexican I used to work with at the pizza place. It was really, really good. Of course, I don't have any instructions on what to add to the meat (so just slice up some onions and bell peppers), but have the recipe for the marinade (for each meal) and a recipe for the fajita seasoning (I just mix up a bunch and keep it in a jar in my spice cabinet--use to taste). I mostly make chicken fajitas, but you can make beef with this I'm sure.
You could probably get away with cutting the marinade recipe in half, depending on how much you make
Marinade: 1/2 cup beer 1/2 cup white wine 2 oz lemon juice 1 Tblsp garlic salt 1 Tblsp salt
Seasoning: 2 parts Taco Seasoning 1 part pepper (just plain black pepper) 1 part Garlic salt 1 part salt
You can make your own garlic salt with garlic powder and salt so that you don't have to go out and buy another seasoning...
Marinate and cook as you would for regular fajitas

Thanks for the seasoning recipe apple. I make veggie fajitas and I add one of each - squash, zucchini, tomato & a small head of broccoli etc in addition to onions and peppers.

You're welcome I've lost and found this recipe several times over the last 15 years--today I posted it on two boards and emailed it to myself so I wouldn't lose it again! (re-found my original hand-written recipe this morning!)

Question: what kind of steak would you use? I really hate it when fajitas are tough or dry.
