You won't/ shouldn't anyway have to grind your own. They will ask for preferences, and it will come packaged for the freezer. There might be a separate butchering fee, as someone said, ask, but its worth it.
It's probably also guided by regulations. The meat CSA I use, the are certified to butcher their own chicken, but they MUST send out the larger animals... The butchering of meat is well regulated to control for bacteria, etc. so I'm not sure they would even allow you to like just pick up a side of beef and do it yourself?

Anyone looking for local, organic, free-range meats and who knows they will not find them in the local grocery store (!), check out the Weston Price link I posted back on page 5 of this thread. Their local chapters (nationwide) are plugged in to all kinds of resources in their local areas. Also google "abundant harvests" to find a network of CSA's in your part of the country.
Twinmama - all of the CSA's and independent ranchers I've seen will work with you to get you what you want. Most typically, when you purchase a 1/4 or 1/2 cow, a fair amount of ground meat will come as part of the purchase (they grind and package the scraps that come from butchering down the various cuts, so nothing gets wasted). You can even request and buy the bones if you'd like, to make your own bone broth.
It is always possible to negotiate (of course for a price) the amount of butchering you do (or do not) want. That is the beauty of working with a local provider: you know exactly what you're getting AND you can get it the way you want. No more mindless gambling on polyfoam trays of mystery meat of unknown age and origin that sit in a warehouse supermarket.

Went to Trader Joe's last night to get some fruits and veggies..did you know the price difference between organic blueberries and non-organic was only .50??
I looked at their ground beef again, it was $6.29/lb..not sure if I am going to find it cheaper than that. Going to the CSA tomorrow and see what they have.

I just made these--they're setting up right now. I didn't have rice crispies, so I used rice chex that I crushed into smaller pieces. With a GF oatmeal they could easily be gluten free. You could skip the chocolate and pb chips and use nuts, raisins, etc. I had them made, start to finish, in less than 10 minutes. I have some gfree choc crispies and gfree granola. Maybe ill make them tomorrow. But they seem sweet? I wonder if they'll work with coconut oil instead of butter... And palm sugar... Ok, I'll make something like thm tomorrow

If you scroll down, there are tips to making it lower sugar. AND... I just realized I did it wrong The ingredients say "plain granola" not "plain oatmeal". wouldn't be the first time I messed up a recipe, we'll see how they end up with the oatmeal instead of granola I like the idea of replacing the butter with coconut oil--I don't see why it wouldn't work. I'll try it next time (if I make it again, lol, using oatmeal is just easier than worrying about granola, although there is also a link to making your own granola). ETA: So... I've decided they taste fine with regular oatmeal, just very chewy! Also, a little too sweet, so next time I think I'll decrease the amount of honey (not a big fan of honey) and maybe increase the oil just a touch. I'll also try adding a dash of cinnamon and a little vanilla. Since it's oatmeal and not granola, it's even lower fat with fewer ingredients.

I bet its a hell of a lot cheaper than $2.50-$3 for a box of 5-6 bars. I think I like the idea of oatmeal instead of granola. Granola can get a bit expensive and higher in sugar, so I think I am going to give it a shot of what you made and instead of using honey, maybe I'll use brown sugar or something (not sure if it will hold together though??). I like the idea of butter or coconut oil; however, my coconut oil is the raw kind and it smells and tastes heavily like coconut..next time I buy it I am going to get it refined so that its not so coconut like.

Mine smells and tastes like it...the refined isn't chemically refined, its mechanically refined, so its not bad for you, but it isn't as good as the raw. But I seriously do not like coconut that much lol

To me the raw definitely has a coconut taste, the refined not at all. I like coconut, so I'm good with that in most dessert type things, not so good with it in cooking food (although, I liked the flavor it gave my rice once).
Maybe maple syrup would give it a less honey taste too--I may try a little of that next time. I'll have to let you know tomorrow if the bars get hard or if they stay ok.

They're probably pretty similar. I didn't know if I'd like it/use it, so I bought the one that was cheaper on Amazon (but still got really good reviews). I'm not brand picky yet.

Went to Costco today..they have organic ground beef, 4.26lbs for $16.99 ($3.99/lb). They didn't have any other organic beef or pork. They had organic chicken breasts for $5.99/lb, organic whole chickens for $2.49/lb. The chicken is free range and all that good stuff, the beef did not specify if it was only grass fed or not; however, it has beef from Australia and Uruguay (both countries have extremely high standards for their cattle, Australia is 100% pasture fed). But I am not sure if any of the meat is finished with grain or not. I am debating if I want to get a membership or not, because those prices really are reasonable, they had some other organic stuff that was reasonable and others that were not. Unfortunately, I live in a place that is of lower income level, so higher quality food isn't on their agenda.

I'm making mostly organic split pea soup tonight. And egg rolls. If I'm going to chop veggies, I'm doing 2 meals at once. I'm not sure if DH is buying all organic veggies any more. I know he's trying to be picky about it. No meat in my soup this time. But it's going to have onions, cabbage, carrot, celery and assorted spices (tumeric, sea salt for sure.) I'm using organic broth too. It's a soak the peas; lightly cook the peas; everything in and simmer for hours as I like everything broken down in my pea soup. I've never made egg rolls but it doesn't sound to hard. Chop/grate your veggies; stir fry them slightly; tuck in wrapper; fold over and use either egg wash/cornstarch/water to seal the sides closed. Cook. The cooking part is where I'm kinda concerned - how much oil and how long to cook? I don't want to deep fry them so I'm thinking a generous amount of oil on the bottom of a deep pot and turn frequently. We'll experiment and see how it goes. DH found gluten free wrappers so he's kinda excited about this too. I may try to bake one or two and see how that goes. I always bake the frozen ones I buy. Anyone have any thoughts?

No pb chips and used granola. I did cut down on the granulated sugar, but will have to work on honey too, were still a tad sweet... But good! Thnks for the recipe!

Where did you find gfree wrappers for egg rolls? Name brand? How did they turn out? Thanks DH did. I don't know and I'll let you know. I think the wrappers were from Outpost, a local food co-op. I think DH said they're either 1.99 or 2.99 for 6 wrappers. They were NOT refrigerated. WHich I find odd. But they ingredients he read off weren't preservatives that I know of. And of course I can't remember what was in them. But I think they're round because I was expecting square/rectangular.

Beth, You can do a pan fry, but be careful of the splatter as you have small kids around. Heat a teaspoon or 2 of oil in a skillet on low heat and put the eggrolls in - 3-4 minutes per side or until the wrapper is cooked through. I have done this with dumplings, but my wrappers were really thin - not GF.

Twinmama - if you just hate-hate-hate coconut oil, use organic grapeseed oil. It has a lower smoking point than coconut oil but a higher one than olive oil.
My naturopathic doctor recommends, in order: 1) coconut oil (highest in medium chain EFAs, stays stable when subjected to heat), 2) grapeseed oil (as an alternative to coconut for sauteing, and as a healthier alternative to vegetable oils in baking) and 3) extra virgin olive oil (for very low or no heat applications: salad dressings, for finishing dishes, pesto, etc).
ETA: other healthy, no-heat oils include flaxseed oil and avocado oil, but they are both pretty expensive.
You can get both organic EVOO and organic grapeseed oil at Costco.

Beth, a couple of tips from a family member who is Philipino and makes egg rolls all the freaking time (We love her!). If you use green beans, use scissors to cut them, it's faster. Wrap TIGHT so they don't unravel, and she usually deep fries, but pretty hot and not all that long. She doesn't do small batches of rolls, we went to help assemble one time. One got to separate wrappers as their only job, a couple of us filled and rolled and others filled up the boxes for the freezer. Reading this thread has made me hungry.

Weird, why did it make the link for granola bars a video thing?? Glad you liked the granola bars though! I think next time I make them I'm going to increase the rice cereal and decrease the oats as well as the other things I mentioned earlier.
**Coconut oil!! BOGO free If you have a Fred Meyer. I just found this out by accident tonight when I walked by the health food section, I got two big tubs (Nature's Way, 2 lbs each) for $28. It will last me a long time, but it lasts and worked out cheaper than Amazon. Guess I'm glad I went to see if they had any discounted veggies (they didn't). I did get the stuff to make an oreo cake for a coworker though (lol, not healthy, not organic, but oh-so-good! The guys love it when I bake for them).

They're spring roll wrappers, made in Vietnam. They are not labeled as GF but when DH looked over the ingredients, there wasn't anything gluten in them. I forgot to write down the brand though. Tonight.
Overall, this needs some work. The filling turned out fine. The wrappers were really fragile though.
