I have made this roast & served it shredded on good Italian bread as a sammich, or with mashed potatoes and one time with polenta. The sammich won the votes of hubby & kiddo.
Chuck roast 1 onion diced diced garlic 1/2 jar of pepperoncini peppers 1/2 jar of hot cherry peppers 1 large can tomato sauce Beef stock
Preheat oven to 325
Salt & pepper chuck roast & brown both sides in a little oil in a dutch oven or oven proof pot. Throw in diced onion, garlic, peppers, tomato sauce, and beef stock. Cover & bake for 3-4 hours until roast falls apart.
It's stupid simple, tastes great & can be served in a variety of ways. I toast Italian bread, add some peppers & a couple of slices of provolone cheese & shredded beef. The extra sauce can be used to dip the sammiches in like a French Dip. OMG it's yummy.

I was looking for some new recipes to try. I'm adding this one to the list. I'll get the ingredients on my next shopping trip.
