Does anyone have any favorite recipes to share for meals to make ahead and freeze for a busy day? I do this with meatballs, sauce, and lasagna, and am looking to expand the variety.

Enchiladas, taco meat, plain browned ground beef; meatloaf, fried rice, potatoes...do a search "once a month cooking" "freezer cooking" or "OAMC". Good Cheap Eats.com; Happy Homemaker.com; Money Saving Mom.com have several links and info on freezer cooking.

Dawg’s “Just Right” Skillet Chili
1 lb ground meat (I prefer 20 oz lean ground turkey) 1 can (15 oz) dark red kidney beans (I prefer Bush’s Best Low Sodium) 1 can (15 oz) tomato sauce 2 tsp chili powder 1 tsp ground cumin 1 tsp garlic powder ½ tsp ground black pepper OPTIONAL: 1 can (15 oz) stewed tomatoes TOPPINGS: chopped green onions shredded cheese sour cream chopped mushrooms
In a skillet on medium heat, completely brown and drain meat. Add spices, coating meat well. Add beans, tomato sauce, and optional stewed tomatoes (if used). Mix well, cover and simmer on low heat for 20 minutes or until beans are tender. Serve in a bowl with toppings of choice.
Serves 2-4
NOTES: This recipe freezes very well. If you want to extend the recipe without doubling it, add 1 can (15 oz) of pinto beans. For thicker chili, drain the beans before adding them.

Mushrooms? On chili? Really??
Mom will recycle spaghetti sauce into chili (yuck) but that's the only way I've seen mushrooms associated with chili....

Almost any kind of soup freezes decently but I avoid cream soups although I will occasionally put everything in but the cream and add it when it comes out of the freezer.
Lasagna of any type freezes well. So does my swiss steak .
Swiss Steak
One large onion sliced thinly One can whole tomatoes, squished into large pieces (or you could probably used diced). One round steak Flour for dredging Canola Oil Salt and Pepper 2 tsps fresh thyme or italian seasoning (optional)
Cut steak into quarters or smaller pieces. Pound on both sides with a tenderizing mallet until it is about 1/2 as thin as it was originally. (As in a one inch steak is down to 1/2 inch). Salt and pepper both sides. Dredge in flour, pressing down to get completely covered. Set aside. Preheat oven to 350 degrees.
Heat large skillet over medium high heat. Add enough oil to cover the bottom. Add steak and brown on each side. Leave steak in skillet but remove from heat. Top browned steak with sliced onion in rings then cover with tomatoes (and all the juice!). Add optional seasonings if you want. Cover skillet and place in oven for one hour.
Serve with mashed potatoes. You'll have lots of rich tomato gravy to go on them. It does freeze well. For us it makes two suppers plus one lunch. It all depends on how many pieces you cut the original steak into.

I slow cook Italian Sausages in favorite spagh. sauce (Prego, Newman's, etc.) add onions and green peppers. Then I freeze it for whenever and serve it on hoagie buns with mozzarella melted on it.
