So, for Thanksgiving I always try to find a new pie to make, thought of this one after a coworker brought a slice to work--smelled good, one of the other coworkers started talking about how much he missed a good one (he and his wife are getting divorced...) Anyone have a recipe for Sweet Potato Pie? I'd love a "tried and true" one! Thanks

Here's how I make mine (amounts are approximate): 1 sweet potato, medium to large, boiled for about 45 minutes, run under cold water and peel then removed Cut the sweet potato (or just break it up) into a bowl and add 1 stick of softened butter Mix with mixer until smooth. Combine the following ingredients: 1 cup sugar 1/2 tsp cinnamon 1/2 tsp nutmeg 2 eggs, separated, whites beaten to stiff peaks 1 tsp vanilla 1/2 cup half and half Beat with mixer until smooth and pour into unbaked pie crust. Bake in 350 degree oven for about an hour. You can top this with pecan halves, or serve with whipped cream. Whatever is your preference. Heck, you can even serve it nekkid!

I love sweet potatoes. But, i gave them up cuz nobody will eat them besides me.

Thanks so much for the recipe! I've never had one, but I always hear that they're good. My dad really likes sweet potatoes, the rest in the family aren't big fans, unless they're baked with lots of butter and marshmallows I've had sweet potato fries too, but have to eat those in small amounts or I don't like them much by the end.

I adore sweet potatoes. We have them about once a week, usually baked and with butter. Don't do the casserole with marshmallows except at holidays. We also like sweet potatoe fries, but don't eat them a lot. I think you'll like the pie. Sweet potato pie is very sweet, so be expecting it. You can cut that down a bit by adding a squirt of lemon juice and making your sugar half white and half brown. A bit of experimentation will give you just the pie you want!
