I got the recipe off Elana's Pantry blog page. I was a little bit skeptic at first, but it turned out really good. Put a slather of jam and it is heaven. Paleo Bread 1 ½ cups blanched almond flour 2 tablespoons coconut flour ¼ cup golden flaxseed meal ¼ teaspoon celtic sea salt 1 ½ teaspoons baking soda 5 eggs ¼ cup coconut oil 1 tablespoon honey 1 tablespoon apple cider vinegar 1.Place almond flour, coconut flour, flax, salt and baking soda in a food processor 2.Pulse ingredients together 3.Pulse in eggs, oil, honey and vinegar 4.Pour batter into a greased 7.5" x 3.5" Magic Line Loaf Pan 5.Bake at 350° for 30 minutes 6.Cool and serve The things I did differently are, I used regular almond flour and Sicily Sea Salt. I also did not have a food processor so I used a hand mixer. Oh and I used a regular loaf pan. mmhmmm, IMHO it is really tasty! I am going to try several of her other breads this week. She has a pumpkin one I want to try, but I can't find organic canned pumpkin here and I haven't found any baking pumpkins yet to make my own.

It looks dairy free too. And I think DH can either use honey or tweak it to replace it with Stevia (or whatever he's using for sugar) and eat it too.

I use the honey. I haven't tried Stevia. I know it is supposed to be "natural", but so is Truvia and I reacted to that. So for these recipes I will stick to honey or agave nectar.

Yeah, DH was working on a low sugar diet to kill off a yeast infection. he's been successful in that, I guess. But he's not going back to sugar. I'm not worrying about it, for the most part. DH has some cinnamon agave nectar, I don't like it personally.
I'm not going back to artificial sweeteners but I like my refined sugar. ;D
