I am a vegan, have been since birth. I wouldn't say that my diet is very healthy though. I eat lots of pasta and potatoes. But I did do something wonderful to a red cabbage the other day in the pressure cooker.

Hey! I was perusing the board and saw some recipes. Very cool. 9 year vegetarian, 2+ vegan. I eat a lot of fruit and veggies. Some pasta and occasionally some faux meats for the kids. Nice to meet you.

Their belief that mother's milk belongs to the offspring of the mother (as in, they don't drink cows milk because of this belief) applies to humans a well . I'm not vegan, but I know a number of them (I work actively in a community vegetable garden) and they all have happy, healthy breastfed babies. When their children get off the breast, they move to the same diet as the parents.

I have been vegetarian since 2002. I can't give up my dairy so I can't be vegan.

I'm having a hard time loosing weight & heard that vegans / vegetarians don't have to count / measure to maintain a healthy weight. I used to be vegetarian & maintained 18 BMI without any problem. Thinking of going back. That plus some of the videos on how animals are killed gross me out. I will only eat chicken now .... did you read how 18 mile long nets are just left in Antarctica when the poachers are done? All for Chilean Sea Bass? Yep. I can give up fish but not my cream, cheese, half & half, eggs for baking only TheOtherMe, is there a substitute for eggs?

This seems expensive. $15 for the makings for vegan chili, 3 string cheese, pint cream, & herb tea. No idea how much it'll make (DD will precook the 2c dried beans tomorrow while I'm at work) -- I'm vegetarian now / GS2 is vegan.

Actually 1/2 the menu is vegetarian with a vegan alternative. But no idea how to do lattkes without eggs. Or matzo balls. And passover will be here soon I guess I could do lattkes without them but egg is what makes the matzo ball light & fluffy As to cost: that $15 was really $10 for the chili & it fed 6 of us with another night in the freezer. ... pretty damn cheap! reader79: egg substitute ideas?

Flax seed and chia seed meal are good egg replacers, as are silken tofu, bananas, Ener-G. Just google vegan egg substitute! My chili uses kidney beans, chickpeas, sometimes black beans or quinoa, zucchini, red pepper, onion, garlic, diced tomato, corn, tomato sauce, chili powder, cumin, cayenne pepper. Easy, quick, and delicious!

I'm not but DS2 is, he always had some stomach issues and since going vegan the issues have gone away. Family dinners get a little interesting, we will accommodate his choices, he gives us a list and then takes all the leftovers home that were not used. Win/win for him

I usually use flax seed instead of eggs in baked goods. You mix ground flax seed and water... 3 TB to ... Eh, I don't know and am not home now but it says it on the bag!
