I'd rather have fresh ones. Since I'm from the land of cows, cheese and lushes I've been eating cheese curds my entire life. We stopped at a cheese factory earlier this summer. I've been going to this particular cheese factory for damn near 40 years. I remember how the bathroom used to be (string light pull and damp) and you had to wiggle your way around cheese vats to get to it. Still do actually. But they've cleaned up the bathroom considerably! I was talking with the salesclerk and told her my kids were 3rd generation for stopping there. It made her happy to hear that.

The freshest curds "squeak". In Quebec you can buy cheese curds in a bag the same way in other places people buy potato chips. Amazing. This province is really in love with their dairy products. Cheese curd is also what is used in poutine which is a combination of french fries, gravy and these curds. You can judge how fresh a curd is by it’s “squeak” factor: the more the cheese squeaks on your teeth the fresher and better the curd. Or as you would say in French “skouik.” I used to joke with a former coworker (who was from Canada) about how awesome Canada was because of the food they had there compared to the US. On her trips home, she would load up and share with us All Dressed Ruffles and Coffee crisps. I wished I would've known about the cheese curds back then

Don't fry me in oil for this, but I don't like them....it's the squeak! It's like nails on a chalkboard to me. I am sure they'd be delicious melted, though. Thanx, Beer. I was feeling so alone. It's the squeak that gets me, too. TGH loved 'em.

Just the word "curds" makes my skin crawl a bit. And I think of Muss Muffit, on her tuffit (?) eating her curds and whey. Then BAM! there's a spider fucking everything up.
