1 cup or so assorted dry beans and lentils 1 cup brown rice
Simmer for a long time in water or homemade chicken stock with no fat or salt. If you have some boiled chicken from making stock add some to the soup.
Add garlic, ginger, curry powder or other low sodium spices like celery powder or Italian spices.
Add vegetables like cabbage, onion, cauliflower, broccoli, carrots, frozen corn, green beans, zucchini, kale, spinach, parsley or any lower carb veggies that seem to go in soup.
My diet calls for 15-45 carbs per meal or snack and whole grains, not much fat or sodium and less than 4oz of lean protein so this soup is good for my diet.
I like spicy so add lots of garlic, ginger and curry.

sounds good...i would add cabbage and onion prasley and spinach....
