After umpteen years of ignoring any recipe that has buttermilk in it, I finally decided to buy some to make this one recipe. It only came in quarts, and I thought I needed a cup - but as it turns out, I only needed a quarter of a cup (d'oh!) So, now I have a whole bunch of buttermilk. Next time I'll make it with vinegar and milk. But, for now, what great thing should I make with it. Is there some awesome use for it? Scones or ice cream or something? Anything but using it as a wash for battered chicken.

Buttermilk can be used in making a variety of cakes and muffins. Just do a google search for recipes.

My grandmother used to love to drink it on a hot day. Said it was refreshing. I agree. Take half a cup of cold buttermilk and thin it out with half a cup of cold water. Add some salt and cumin powder - optional. Drink it during the hot summer days. It is very refreshing and good for you.

Most of your recipes remind me of the dishes my asian friends make.

Isn't buttermilk used heavily in that? I had it at a friends home and almost died and went to heaven. PM me the recipe if you can. Please ;D

I substitute milk with vinegar for buttermilk. I think for 1C of milk I put in 1 Tablespoon of white vinegar. This is what my waffle recipe calls for 1C of buttermilk. You let it sit for 10-20 minutes, then use. I think I originally got this from Martha Stewart or something. There was no way I was going to buy buttermilk since I REALLY don't like it!

I've been using buttermilk to make homemade dressing, such as buttermilk ranch.
And then I use the rest to make a million pancakes and freeze them. My kids friends have come to expect to always have a pancake to pop in the toaster when they come by.

I made pancakes - my husband said they were better than my normal bisquick ones, and they probably were, but pancakes are usually spur of the moment for us, so I will keep using the old recipe.

I also do the buttermilk substitution--put a tablespoon of vinegar or lemon juice then fill with milk to one cup and let sit (5 minutes seems to be long enough). The lemon juice may make it curdle just a little, but it's not bad to use. I always have milk and vinegar on hand, so don't have to buy special ingredients (and, when a recipe called for a 1/3 cup buttermilk, it was easy to do with 1 tsp lemon juice).
