This is one of my favorites - we're having it tonight. Foil packets can be made earlier in the day and you just pop in the oven. I usually serve with orzo or rice and a salad.
Salmon in a Spacesuit (4 servings)
4 salmon filets, 6 oz., skin on 2 ripe tomatoes, sliced 1/2 inch thick 12 stems asparagus, trimmed to 4 inch length (I use twice this) 2 cloves garlic, minced 1 lemon, large, sliced 1/4 inch thick 4 tbsp butter 8 sprigs fresh dill (I use dried) salt and pepper
Preheat oven to 375 Cut 4 sheets of foil approximately 1 foot long Rinse and dry salmon filets. Place skin side down in center of the foil. Sprinkle with salt and pepper Place 2 slices tomato on each filet. Add asparagus on top. Evenly distribute the garlic. Place 1 tbsp butter on top and 1 lemon slice and 2 sprigs of dill along the sides of the fish (sprinkle dried dill over top if using) Fold sides of the foil to create a pouch and fold over the edges to seal tightly. Place on a rimmed baking sheet and bake for 25 minutes or until fish flakes. Open carefully to avoid steam burns and transfer to serving plate. Pour juices from the foil package over the filet.

I'm not a big fan of orzo, mainly because I haven't had it in a dish that has been memorable. how do you prepare yours?

I just boil it in salted water, about 9 minutes. I like to have something with this dish to soak up all the yummy juices from the package.

You should cook the orzo in chicken broth, then drain and add some sliced, roasted garlic, thyme, rosemary and basil.

Reposting my Halibut recipe. I like halibut best, but you can use any white fish.
This is fast and easy. Put a couple pieces of halibut in a baking dish, dot with butter and sprinkle Parmesan cheese and breadcrumbs over the top.
Bake at 400 degrees for appx 10 minutes (measure how deep your fillet or steak is, then figure 10 minutes per inch. So if the fillets are from the tail and thin pieces you might only cook for 6 minutes or so)
Serve with rice, salad, and a nice white wine.

we did an amazing trout recipe. boyfriend filleted them and we dredged them in flour and fried them in olive oil. i made a blackberry, jalepeno, and green onion sauce to and made honey glazed orange peel to top them with....
best fish i have ever eaten. BF regularly eats trout, and said it's the best he ever had.

i also do orzo in chix broth. orzo is particularly good w/ roasted veggies and a lemon/OO/garlic dressing.
for halibut: marinate in 1 lemon, 1/2 lime, EVOO, garlic, pepper...grill...delish
tilipia: mix together mayo and old bay seasoning. pat fish dry. slather the mayo mixture on the fish. place in bkng dish and sprinkle w/ bread crums and paprika and bake.
you can also lightly bread the halibut and partially fry and continue to cook in the oven. i would put in melted butter and pepper, then in some seasoned bread crumbs or panko mixed with fresh grated romano
