I generally add a little bit of milk or cream to the sauce to get the consistency I want.

That makes sense. The guys really loved it, so this one is a keeper, and I will try adding milk or cream next time. We are having a get together here in 2 weeks, and I am going to make chicken cacciatore and minestrone soup! I swear I must be Italian somewhere, even though my genealogy says otherwise!

Just make sure to add it at the very end -- it'll burn very easily otherwise.

The version I've made has an entire container of cream in it. Probably not the healthiest meal, but it sure is yummy!!!
ETA: Maybe it wasn't an entire container. I can't remember; it's been too long since I've made it. <<goes to try to find her recipie...>>

I made that last week cheesy! I used about a cup of the pasta water to thin out the sauce. I will definitely be making it again as well! OH! I don't know if you like spice, but I threw some red pepper flake in when I reheated it for lunch and it was FANTASTIC!

I had Eggplant Rollatini at a local Italian restaurant ...... OMG, I have to make the recipe. Breaded and fried eggplant stuffed with ricotta cheese topped with sauce and mozzarella cheese. Delicious!!!

I keep a small container of red pepper flakes in my purse, and a bottle at work, and a large container at home. I read that adding red pepper flakes to your food helps rev your metabolism. I don't know if that's true, but I really love the flavor it adds to food. Really good on scrambled eggs, tasty on sandwiches, steamed vegetables, pasta, pizza, grits, etc
