I'm not a big coconut fan, but that recipe doesn't look too bad. We are big sweet-tooth people, so I don't worry about the quality of our desserts. I go for moderation, and then not worry about it.
However, I have had people trying to shove "healthy" cookie recipes at me for 20 years. I was never impressed by them - they didn't taste very good - I'd rather have a plate of vegetables. I just didn't see the point. A few months ago someone shared a cookie recipe that included an avacado. Why would someone waste a perfectly great avocado AND a batch of cookies at the exact same moment. Seriously - it should be illegal.

LOL. I tend to agree with you, but this cookie recipe has all things I like - bananas, coconut, almonds, and chocolate. And extra ripe bananas are very sweet. I know they're not for everyone, but I know that some people like to feel less guilty when they indulge. I certainly do. LMAO!

This is a good recipe. Mother and I enjoy this for breakfast, with tea or coffee, or as a late-night snack:
Apricot-Banana Quick Bread
1/4 cup butter, softened 3/4 cup sugar 2 eggs 1 cup mashed ripe bananas 1-2/3 cups all-purpose flour 2/3 cup toasted wheat germ 2 teaspoons baking powder 1/4 teaspoon salt 1/4 teaspoon baking soda 1 cup finely chopped dried apricots 2 teaspoons grated lemon peel
In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in bananas. Combine the flour, wheat germ, baking powder, salt and baking soda; gradually beat into the banana mixture. Stir in apricots and lemon peel. Transfer to a 9-in. x 5-in. loaf pan coated with cooking spray. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

the recipe for almond meal is in the cookie recipe if you click the link. I believe it's just almonds in the food processor.
I got semi-sweet chocolate morsels, bananas, and plenty of almonds, so I'm definitely baking these cookies this week. I'm omitting the coconut because I don't think DH likes it, and I'm using olive oil instead of coconut oil. I'm also going to make some with golden raisins because my mom is visiting and can't have chocolate.
