DD and I were in Fairbanks at the end of March almost two years ago. We loved it and talk repeatedly about wanting to return. While we were there we took a tour van up the Dalton highway to the Arctic Circle. The van stopped at a park by the Yukon river bridge and we walked on the frozen Yukon river. In Fairbanks itself the University has a wonderful museum. An international ice sculpture show was happening while we were there and that was just amazing. We were doing a college visitation so we did spend quite a bit of time at UAF. We also visited nearby North Pole Alaska and went to Santa's house. There were more attraction that were open from the May to September time period but we still found plenty to do. It is a beautiful place.

Alaska is AWESOME, I lived there for 2 years in the Anchorage area so if you have any questions about that let me know
Alaska is great for hiking, fishing, bear watching, glacier cruise watching, dolphin watching, looking for random wildlife on the road (eagles, doll sheep, moose, etc.), among other stuff.....

Where in Alaska are you going? It's a BIG state! ;D
If you are going to be in SE Alaska you might check out the Alaska cruise thread from a couple of months ago. And FWIW I wouldn't take a cruise but would definitely recommend the Alaskan Marine Highway system of Ferries.
