At this time of year many are looking for new ways to use up chicken or turkey leftovers. Found this on another site and like it.
Chicken Lo Mein
½ lb spaghetti, uncooked ¼ c Asian Sesame Dressing 1 lb uncooked chicken breast in strips (3/4 lb cooked) 2 cloves garlic, minced 8 oz bell pepper instrips 8 oz onion sliced in ½ moons 1T peanut butter ½ c chicken broth ¼ c lite soy sauce 2T chop cilantro 2T chop peanuts
Cook spaghetti. Heat Dressing. Add chicken & garlic. Stir-fry 3 minutes. Add veg, broth & peanut butter. Cook 3-4 minutes. Return spaghetti to pan. Mix. Heat thru. Top w/cilantro & nuts. Serve w/rice to capture the sauce. Makes approx 4 servings.

Here's my recipe for chicken pot pie - I use either leftover roasted chicken or some chicken breasts that I've poached in stock.
2 cups cooked chicken cut up into cubes 1 bag frozen mixed vegetables 1 potato - cubed and cooked 2 pie crusts
Sauce
2 Tablespoons butter 2 Tablespoons flour 2 cups milk salt & pepper to taste 1/4 teaspoon dry mustard 1/8 teaspoon nutmeg
Warm the milk in the microwave or in a pan on the stove but do not boil. Melt butter and add flour, mustard and nutmeg. Stir and cook over medium heat for a minute or two until hot and bubbly. Slowly add the hot milk and cook. stirring constantly until thickened. Add the chicken, potato and vegetables. Taste and adjust seasonings.
Pour into a pie pan lined with one pie crust. Top with the 2nd pie crust, brush with an egg/water mixture and bake at 350 for 45 min or until the crust is browned and the filling is heated through.
This is nice served with a green salad and crusty bread.

smoked turkey goes into jambalaya
Must admit I am lazy here and use the box mix for the base w/extra celery & bell pepper, the turkey (or smoked sausage) and shellfish.

Okay, here's my contribution. Easy and tasty and doesn't cost much.
Picnic Chicken Pitas
1 package (16 ounces) frozen broccoli florets, cooked and drained 2 cups shredded cooked chicken 1 cup (4 ounces) shredded cheddar cheese 1 medium tomato, chopped 1/4 cup mayonnaise 2 tablespoons prepared mustard 1/2 teaspoon salt, optional 1/8 teaspoon pepper 4 pita breads (6 inches), halved 4 bacon strips, cooked and crumbled, optional Directions: In a large bowl, combine the broccoli, chicken, cheese and tomato. In a small bowl, combine the mayonnaise, mustard, salt if desired and pepper; pour over the broccoli mixture and toss to coat. Spoon about 3/4 cup into each pita half; top with bacon if desired. Yield: 4 servings. I've used canned chicken in these when I didn't have leftover cooked chicken. It's okay with canned, but I like the "real" stuff better.

When making the sauce instead of mixing the milk with the roux, I would use chicken broth. I have used pie shells(store bought), but when making this recently I put the meat and veggie mixture in a greased vessel, and cover with Crescent roll dough. You can get this dough now in unperforated sheets.

Anne and SF - have you ever frozen your pies and then cooked w/o thawing? I am baking off the first of my frozen pot pies, and I'm not really sure of cooking time/temps. I just put an uncovered pie in the oven at 400 degrees, with the timer set for 45 minutes.
