My MIL is borderline diabetic and for the past few years she has been opting out on desserts, breads, etc and really watching her carbs. I feel so bad at birthdays watching her sit and look at everyone eating cake, or only taking a teeny tiny bite. I'd love to make her a cake for her b-day that she can have a decent slice of. Anyone have ideas or recipes?

Believe it or not, I made a DELICIOUS bean cake just a few days ago. The recipe calls for black beans but I used soy black beans to further reduce the carb count. My kids keep asking me for some! I followed the recipe for the cake but for the icing I replaced the butter with cream cheese. Yummy! The only caveat, the cake is much better served at room temp. I put it in the fridge (cream cheese) and it gets a weird "cool" taste to it. Mine is even lower since I used the soy black beans (some people are anti-soy but they work for me). Good luck!

Splenda is readily available to bake with. Cheesecake recipes can be easily made with Splenda-I actually use less Splenda than the quantity of sugar called for and don't have to mess with the other ingredients. Splenda does not bake well in flour recipes-I don't know how to explain it but heat causes the Splenda to separate into liquids and it knits back together when cool. That doesn't go over well in flour recipes. So a regular cake recipe doesnt work well substituting Splenda, and regular cake flour is high carb anyway. One cup sugar and one cup regular flour add up to a whopping 300g carbs and most cake recipes use double that! So the experiment for cooks is how to take that cheesecake recipe, using splenda, but tweak the recipe to make it more cakelike but less dense cheesecakelike. The answer is eggs and beans. If you use soaked beans you are going to add too much moisture. Bob's Red Mill flours include black bean flour, garbanzo bean flour, white bean flour. White bean flour has the lowest carb count followed by garbanzo and black. So if you have the time, money, and kitchen space to experiment, you can find us the holy grail-a perfect low carb cake recipe using readily available ingredients from the average american grocery store

Betty Crocker has packaged low-carb cakes mixes available. They are quite good.
