slice up some onions and one lemon. lay in an oven proof sautee cast iron pan. (before you do this, you want to get your chix ready by rinsing and patting dry...mix together in a bowl...bit of olive oil, pepper, cayenne pepper, oregano, poultry seasoning and black pepper....make sure you rub some underneath the breast skin and massage the entire chix with it..stuff the cavity w/ garlic cloves and a 1/2ed shallot and the ends of the lemon)
alternate the onion and lemon slices to make a bed for the chix. place chix on the bed...throw some whole cloves of garlic and a few carrots around the chix..
roast at 400 for about 1-1/2 hours...no basting....no cover...
remove. remove from pan and let rest. remove and throw away the lemon slices. remove the onions, garlic and carrots and keep warm.
de grease the yummo juices. set on burner on high. mix your shaker about 1/3 full w/ water and add flour..shake that up and add to the boiling pan juices. add salt and pepper to taste.
serve w/ mashed potatoes and some roasted green beans. very good and easy and the house smelled divine!!!
