I changed enough of this recipe to call it mine ;D we've been making this for a while now and served it at my church fair last weekend - voted fan favorite in the soup contest! It's super delicious, pretty good for you and easy. Ingredients: 1lb ground turkey 1 medium sized green pepper, chopped (add onion if you want - we don't use it) Minced garlic to taste (I use about 2tsp or so I think? I like garlic!!) 1 tbsp olive oil 1 can pumpkin 1 can diced tomatoes (**make it the ones with green chiles if you want some heat!) 1 can dark red kidney beans 2tsp (to taste) chili powder Salt & pepper to taste Saute the pepper & the garlic and oil in a medium sized pot until peppers are tender. Add the meat in to brown. Once the turkey is done, drain & mix in pumpkin, tomatoes and kidney beans. Season with the chili powder and salt/pepper. Simmer covered as long as you can, and voila! Delicious & lasts a few nights for dinner for 2 of us
