On the formal dinner nite I can eat later or do room service to avoid packing items that I'll use rarely on the cruise.
Any other ideas?

Sure - 2 bathing suits, 3 bottoms, 5 tops, two sweaters/cardigans, one jacket, two pairs of shoes!
Bring a laundry cord and plan to sink wash.
You don't need more clothes than you'd need in a regular week. Check out the weather where you'll be docking, and if you're going somewhere known for shopping, plan on buying something there (and thus packing less).
A good skirt and nice top would get you into a formal enough place on most cruises, or just avoid that room if you don't want to dress up.
A lightweight cardigan is a must for a crisp night, and a scarf will dress up any outfit (try it - jeans, white tshirt, pretty scarf!).

so - are you taking 30 days out of the 90 on the QEII? How to pack will sort of depend on where you will be. What time of year and which ports will you be visiting?
I worked as a crew member for 4-6 months at a time and was able to manage with my airline limit of carry on and 2 bags (50lbs each). You should be able to do something similar.
Formal wear can be recycled - no one remembers what you wore 3 weeks ago. Pack basics that mix and match well. I was a fan of khaki's and jeans with a variety of tops. Since I was working I also packed two suits, 3-4 pairs of dress pants and the same variety of tops/sweaters.
