I made this today...OMG it was sooooooo good. Got it from the Pioneer Woman site. She has some great recipes! Ingredients 1 whole Onion, Diced 1 stick 1/2 Cup Butter 1/3 cup Flour 4 cups Whole Milk 2 cups Half-and-half 4 heads Broccoli Cut Into Florets 1 pinch Nutmeg 3 cups Grated Cheese (mild Cheddar, Sharp Cheddar, Jack, Etc.) Small Dash Of Salt (more If Needed) Freshly Ground Black Pepper Splash Of Chicken Broth If Needed For Thinning Preparation Instructions Melt butter in a pot over medium heat, then add the onions. Cook the onions for 3 to 4 minutes, then sprinkle the flour over the top. Stir to combine and cook for 1 minute or so, then pour in milk and half-and-half. Add nutmeg, then add broccoli, a small dash of salt, and plenty of black pepper. Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt. Taste seasonings and adjust if needed. Then either serve as is, or mash it with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree it in a blender, return it to the heat and allow to heat up. Splash in chicken broth if needed for thinning.) thepioneerwoman.com/cooking/

Thanks for the recipe, I was just going to try to look one up (took home a ton of broccoli and other veggies home today that were leftover from a wedding my family did decorations and rehearsal dinner for). Always nice to have one pre-approved All I need to buy is the half and half.

Is there some other veggie that would be good in a cheese soup other than broccoli? I would love to make that but i don't think my family would eat it as they dont' like broccoli. Maybe potatoes or something like that? the pioneer woman website has tons of soup recipes....I've also made her baked potato soup and it was reallllllly good too.

snerd--may have to look for a specific recipe, but at work we used to make a cheese soup with potatoes, carrots and sausage. I don't have a recipe for that one though, but I do remember it used liquid smoke. It might be possible to convert this one--not sure. I've checked out some other pioneer woman recipes (like steff mentioned) in the past, they looked good but I haven't tried any yet.

I've tried many Pioneer Woman recipes and I haven't found a bad one yet. Bad for you maybe but oh so good.

Asparagus. Or maybe greens? (http://eatocracy.cnn.com/2011/10/06/take-a-chance-on-green-soup-that-is/). Potato would probably be the best if they are not vegetable eaters.
