*ahem* Before I continue, I am going to tell you that I tend to feed anywhere between 8 and 30 people for thanksgiving. This year, it looks like it may be a lot closer to the small number so I will give you the "small" get-together recipes.
Green Bean Casserole Serves 6 Prep: 10 min. Cook: 30 min. 3 Cans French Cut Green Beans (drained) 1 Can Cream of Chicken Soup 2 TBSP Worcestershire sauce 1/3 Cup Milk (I like it thick) 1 (6OZ) canister Fried Onions Salt and Pepper to taste
Preheat oven to 350 degrees. Combine all the ingredients and half the fried onions in a bowl and mix well. Pour into a 8x8 Casserole dish OR a 9 inch Pie Pan and bake for 30 minutes. Top with remaining fried onions and allow to cool.
Baked Mac and Cheese Serves 8 Prep: 15 min. Cook: 20 min. 1/4 cup butter or margarine, divided 1/4 cup flour 1 cup milk 1/2 lb. (8 oz.) Velveeta, cut into 1/2-inch cubes 1 lb Rotini Pasta, cooked 1/2 cup Shredded Cheddar Cheese
Preheat oven to 350°F. Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add velveeta; cook 3 min. or until melted, stirring frequently. Stir in rotini. Pour into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Dot remaining butter over casserole. Bake 20 min. or until heated through.
Roasted Garlic Bread Makes a lot. 2 heads of garlic, roasted and pureed 1/4 lb (1/2 cup) unsalted butter, softened 2 tbsp dry yeast 1/2 cup warm water 2 tbsp kosher salt 3 1/4 cup wheat flour 3 1/4 cup flour* cornmeal
*can use all regular flour, if desired
1. cream together garlic puree and butter, set aside 2. Combine yeast with 1/2 cup warm water in large bowl,let proof 5-10 minutes. Stir with small fork or whisk. Add the rest of the water, Add salt. 3. Stir in flour one cup at a time, beginning with the wheat flour. Use a whisk until the dough becomes stiff, then switch to a wooden spoon. 4. After all the flour is mixed, turn the dough onto a well floured surface. Knead for 10-15 minutes, rhythmically, until the dough is smooth, non sticky, springy and elastic. Add more flour if necessary. 5. Cover the dough with a kitchen towel while you wash, dry and oil the bowl. Knead the dough for a few more turns, form a ball and place in the bowl. Cover the bowl and put in a warm, draft free place for 1.5 hours, or until doubled in size. 6. When doubled, flour your fist and punch the dough down. Knead it a few times and then let it rest. Sprinkle 1 large, or 2 small baking sheets liberally with cornmeal. DIvide the dough into three equal parts, 7. Roll each piece of dough into a rectangle, approximately 11x7 inches. Spread with the garlic butter mixture. Roll jelly roll style and pinch ends closed. Place the dough logs on a baking sheet, and slash with a sharp knife at about 2 inch intervals, at an angle. Cover and let rise for 30 minutes. Preheat oven to 400 degrees 8. Bake for 35-40 minutes.
Pumpkin Pie 1 Pie 1 (15 ounce) can pumpkin 1 (14 ounce) can Sweetened Condensed Milk 2 large eggs 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon salt 1 (9 inch) unbaked pie crust
Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes. Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.
That's it for now. I don't want to take up too much space with silly recipes.

Baked Sweet Potato Casserole
A couple of large cans of sweet potatoes (they're really squash, but who cares?), smushed with a fork or potato smasher brown sugar to taste dash of salt buncha raisins buncha walnuts (or pecans, but walnuts stay less mushy) little bit of molasses Mix it all up in a big bowl and pour into a rectangular baking dish.
Bake in 350 degree oven for about 1/2 hour, or until heated through. Top with big marshmallows and put back into the oven until the marshmallows start to melt and brown. DONE! GOOD!

Pumpkin Pie
2 eggs, 12oz half&half, 1/2 c Splenda, 1 tsp Chinese 5 Spice powder, 1 can pumpkin.
Blend well, pour into unbaked pie shell, bake 15 min 425 degrees and then 40 minutes 350 degrees.
I don't like nutmeg, and the licorice ingredients in Chinese 5 Spice powder add an interesting delicate undertone.
Why is it called 5 Spice when it has 7 ingredients?
